🍆My Favorite Eggplant Curry

Hello friends,
Today feels special—the rain has been gently falling all day, creating a beautiful and soothing atmosphere. On a day like this, there's something comforting about cooking a favorite dish. This is my first time sharing a recipe in the GEM community, and I'm excited to introduce you to my favorite: baigan (eggplant) sabzi. I used to always cook it with potatoes, but one day I ran out of potatoes and ended up making it with just eggplant. To my surprise, I loved it even more! Now, I'm sharing this simple and delicious recipe with you, and I hope you enjoy it as much as I do.
Ingredients:
2 medium-sized eggplants (baigan)
2 tomatoes, finely chopped
2 tablespoons oil
1 teaspoon cumin seeds (jeera)
1 large onion, finely chopped
2-3 green chilies,
1 teaspoon turmeric powder (haldi)
1 teaspoon red chili powder (lal mirch powder)
1/2 teaspoon dried mango powder / termind paste
Salt to taste
Fresh coriander leaves, chopped (for garnishing)

Preparation:
Wash and chop the eggplants into slices.

Cooking:
Heat oil in a pan over medium heat.Add cumin seeds and let them splutter.

Add the finely chopped onions ,green chilies and sauté until they turn golden brown.

Add the chopped tomatoes and cook until they become soft and mushy.Add turmeric powder, red chili powder and salt. Mix well and cook for a couple of minutes.

Adding Eggplants:
Add sliced eggplants to the pan.


Mix well to coat the eggplants with the masala.

Cover the pan and cook on low heat until the eggplants become tender. Stir occasionally to prevent sticking and ensure even cooking.
Once the eggplants are cooked and add dry mango powder and mix well.Cook for another minute and turn off the heat.

Garnish with freshly chopped coriander leaves.Serve hot with roti, paratha, or rice.
