Ingredients:
- 100 g of spaghetti
- 50 g of smoked salmon
- 1 medium courgettes
- 1 tablespoons sesame seeds
- 1 lemon (zest)
- 1 tablespoons of extra virgin olive oil
- 1 clove of garlic
- Salt and pepper to taste
Preparation:
Pasta preparation involves bringing a pan of salted water to a boil and boiling spaghetti according to the package's recommended cooking periods. Save some of the cooking water and drain them al dente.
Wash the courgettes, chop off the ends, and then cut them into thin cubes or rounds to make the sautée. Add the smashed garlic clove to a big skillet with a teaspoon of extra virgin olive oil that has been heated. Add the courgettes once the garlic has become golden. They should be tender but still crunchy after 7 to 8 minutes of cooking over medium heat, stirring often. Add a sprinkle of chilli if desired, and season with salt and pepper.
- In the meantime, cut the smoked salmon into strips or pieces.
- In a non-stick pan, toast the sesame seeds for 1-2 minutes over low heat, until golden and fragrant. Remove from the pan and set aside.
- Grate the lemon zest and set it aside.
Get the salmon seasoning ready: Slice the smoked salmon into strips in the meanwhile. Take care not to grate the white portion of the lemon zest. In a non-stick skillet, toast the sesame seeds over medium heat, turning often to avoid burning (this will take around two to three minutes).
Mix the ingredients: After the zucchini is finished cooking, add the drained spaghetti to the skillet. If needed, add a small amount of pasta boiling water to make everything creamier after thoroughly mixing. Add the grated lemon zest and the pieces of smoked salmon. Gently stir.
Serve after adding the sesame: Lastly, evenly distribute the toasted sesame seeds by mixing them in. Garnish with a drizzle of extra virgin olive oil and some chopped fresh parsley leaves, if desired, and serve right away.
Advice: At the conclusion of the preparation process, you may add a tablespoon of fresh cream or a little amount of butter if you like a richer dish.
You may add some fresh basil leaves or lemon juice in addition to the zest for an added burst of freshness.
