PREPARING A SUMPTUOUS POT OF AYAMASE/STEW ALSO KNOWN AS DESIGNER STEW

Aya mase/ofada stew is also known as designer stew and it is unique for its taste when it is well prepared. Let me give you some back story of when i ate the stew for the first time. The first time i ate the stew was when i visited my Aunt about four years ago in her house - i could remember vividly when she told me she wanted to cook for the week and we'd be preparing soups and stew that will be stored in the freezer for a week or two meals.

I was curious as to what it meant and how it tasted. So i couldn't wait for us to be back from the market where we went to buy the ingredients and start the cooking process. Interestingly, the ingredients to prepare the ayamase stew were not too expensive. However, it depends on your preference of what and what you want to add to it. Some people prefer beef, chicken, cow skin, fish or all or one or two of them. In other words, your choice will depend on how much you want to spend.

To cut the long story short, she prepared the stew and it was a bang. I followed through the process of preparing it and ever since it has been a part of my choice of stew.

So, today i decided to cook it for my family. I have been craving it for quite some time and finally i made it today. This stew when it is well prepared can really make heads turn - from the aroma to the taste 😋

Now let's talk about the ingredients needed to prepare Aya mase

  • 2 big green bell pepper
  • 2 big yellow bell pepper
  • 6 red tomatoes
  • 3 red habanero pepper
  • 4 small sized onions
  • Iru(locust beans)
  • 1/3 cup of palm oil
  • Beef
  • Ponmo
  • 1 tablespoon crayfish
  • 1 tsp of salt
  • 2 seasoning cubes

Step by step guide on how to prepare Ayamase

  • Wash your beef and ponmo thoroughly. Add to a put and cook till tender.

  • Wash the green bell pepper, red bell pepper, habanero pepper,tomatoes and onions

  • I dont want the mixture to be too smooth, so i decided to use mortar and pestle to grind the pepper, tomatoes and onion

  • Then, heat up a pot and add palm oil

  • Allow the palm oil to bleach for about 8 to 10 minutes. Bleaching means allowing the palm oil to heat up until it starts charging color to a lighter shade.

  • Next, add some of the onions you have chopped into the pot

  • Add the pepper and tomato mixture

  • Add the locust beans, seasoning cubes, beef, ponmo, beef stock and allow to cook

  • Cook till it's done and ready for consumption.
