For those unfamiliar with Slavic languages, the name "Černokostelecký pivovar" might prove a challenging tongue twister. This brewery is in Kostelec nad Černými lesy, a town of 4,000 inhabitants. Although modest in many ways, it boasts a vast Renaissance chateau complex. I know the place quite well, as my grandparents have a cottage in one of the nearby villages where I spent my childhood summers. Fond memories include my granddad cycling to town to attend the local brewery festivities that have been held annually since the brewery reopened two decades ago. Unfortunately, my grandpa passed away, but my mum and grandma still spend most of their summers at the cottage. A few weeks ago, my girlfriend and I decided to pay them a visit there and couldn't resist checking how the brewery was doing, so we stopped by for lunch. From my childhood, I remember the brewery as ruins with prohibited entry. Back then, the brewers held the festival in the main square, so I was never inside the building.

Pro mé české čtenáře není jméno pivovaru žádný jazykolam, ale zkuste poprosit nějakého svého kamaráda ze zahraničí, aby si to vyslovil. Nebo jméno městečka Kostelec nad Černými lesy, kde se tenhle pivovar nachází. Kostelec se svými čtyřmi tisíci obyvateli není nijak zvláštní, snad jen rozsáhlý renesanční zámek stojí za zmínku. Tedy kromě pivovaru, samozřejmě. Ale já se tu stejně docela vyznám, prarodiče mají kousek od Kostelce chatu, na které jsem kdysi trávil velkou část letních prázdnin. Pamatuju si taky, jak děda vyrážel na kole do Kostelce na pivovarské slavnosti, které se každoročně konají od doby, kdy byl pivovar před dvaceti lety obnoven. Děda už umřel, ale babička s mamkou na chatu stále jezdí. A před několika týdny jsme se za nimi vypravili s T., přičemž jsme si nemohli nechat ujít pivovar, kde jsme se naobědvali. Z dětství si ho pamatuju jako nepřístupnou ruinu, takže to bylo poprvé, co jsem byl uvnitř.

Now, for a brief dive into history – I've done some research and I wouldn’t want it to be for nothing. The story dates back more than five centuries when the exclusive and highly coveted royal right to brew and sell beer was granted to Kostelec in 1489 by Vladislaus II of Bohemia (also known as Vladislaus II of Hungary). Shortly afterward, the brewery was established and run by the noble owners of the manor. Over the years, it even fell into the possession of influential figures like Ferdinand II, Holy Roman Emperor , and Albrecht von Wallenstein. Not much is known regarding the brewing business, though, except for two incidents. A major drinking feast supposedly led to a fire that destroyed most of the surrounding townhouses and damaged the brewery in 1659. Another severe fire in 1836 left the brewery beyond repair, leading to the construction of a larger one outside the chateau grounds. In 1897, the new brewery acquired a steam engine and doubled its production.

A protože to má být pořádný článek, nastudoval jsem si i trochu té historie. Ta se táhne od roku 1489, kdy král Vladislav Jagellonský udělil Kostelci velmi žádané právo várečné. Pivovar byl vystavěn krátce poté jako součást zámku, tehdy ještě hradu, a provozovali jej majitelé panství. Mezi nimi byly i takové celebrity, jako císař Ferdinand II. nebo Albrecht z Valdštejna. O tom, jak se pivovaru po staletí dařilo, sice není známo mnoho, ale prý tu za jedné pijatice vznikl v roce 1659 požár, který spálil větší část Kostelce. Při dalším velkém požáru v roce 1836 pak lehl popelem pivovar, a tak začala stavba nového a většího mimo zámecký komplex. Nový pivovar dostal v roce 1897 moderní parní stroj a zdvojnásobil produkci.

Little is known about the brewery's operations during WWI, leading me to assume it faced the same struggles as others due to supply and demand shortages. The first significant event in the 20th century was the sale of the brewery by Johann II, Prince of Liechtenstein, to a cooperative formed by local bar owners in 1924 – an innovative way to promote local beer, don't you think? The cooperative invested significantly in the brewery, installed cooling systems, and undertook an extensive two-year renovation in 1931 and 1932. Most of the artifacts you can see in my photos come from that era. The cooperative even swapped its horse-cart for a new truck in 1936 to deliver barrels. I was told it was the one in this picture.

Ani o tom, jak si podnik vedl za první světové války, není známo mnoho. A tak si myslím, že si stejně jako jiné pivovary spíše nevedl než vedl. Asi i na něj dopadly nedostatky surovin a pokles poptávky. Každopádně první opravdu důležitou událostí je prodej pivovaru z roku 1924, od Jana II. z Lichtenštejna jej odkoupilo družstvo místních výčepních, což mi přijde jako super způsob, jak podpořit regionální pivovarnictví. Družstvo do pivovaru investovalo nemalé prostředky, pořídilo chladicí zařízení a v letech 1931 a 1932 ho kompletně zrekonstruovalo. V roce 1936 družstevníci vyměnili tradiční koňský povoz za dodávku od Škodovky. Prý tu na fotce, ale já se v autech nevyznám, tak mě kdyžtak opravte.

Unfortunately, the good times wouldn't last. As regular readers of my #beersaturday posts would anticipate, WWII brought even greater hardships than WWI, causing the brewery to temporarily cease production. Post-war, when the communists took control of Czechoslovakia and began purging the country of private businesses, they couldn't overlook a brewery operated by a local bar-owner cooperative. The brewery was confiscated on January 1, 1949, and then transferred from one "national company" to another in the subsequent power struggles within the party. However, unlike many other small breweries, this one had a stroke of luck – or perhaps an influential protector. It wasn't forced to cease operations, even gained a certain level of independence in 1969, and there were plans to increase production. Yet, by 1974, the communists had changed their course, relegating the brewery to a subsidiary of the Velkopopovický Kozel brewery. From then on, the brewery was neglected and ceased all production in 1987, just two years before the Velvet Revolution.

Ale dobré časy bohužel netrvaly dlouho. Druhá světová válka znamenala omezení, a pak i dočasné zastavení výroby. No, a když přišli k moci komunisté, soukromé družstvo výčepních bylo pochopitelně na ráně. Pivovar byl hned 1. ledna 1949 znárodněn a pak přecházel z jednoho národního podniku do druhého, asi jak se měnila rovnováha sil na různých úrovních stranického vedení. Ale na rozdíl od mnoha jiných malých pivovarů měl ten Černokostelecký štěstí, nebo možná někoho mocného, kdo nad ním držel ochrannou ruku. Komunisté ho nezavřeli, a dokonce získal určitou míru nezávislosti na mateřském Velkopopovickém pivovaru. Dokonce vznikly plány na zvýšení produkce. Ale v roce 1974 došlo k obratu o sto osmdesát stupňů, z pivovaru se stala jen filiálka Kozla a jeho údržba se začala zanedbávat. Pivo pak úplně přestal vařit v roce 1987.

The restitution, returning properties seized by the communists to their original owners or heirs, was often fraught with complications. Alas, this was one of those cases. The Velkopopovický Kozel brewery held onto the venue until 2001 amidst legal disputes. Fortunately, once these issues were resolved, the brewery was purchased by three friends that year. Sadly, two of them have passed away, but they have fitting memorials within the brewery yard.

Restituce občas nebyly nic jednoduchého, což je případ Černokosteleckého pivovaru. A tak se stalo, že Velkopopovický Kozel si chátrající pivovar měl celý areál ve správě až do roku 2001, kdy skončily všemožné právní pře, a tak mohli pivovar odkoupit tři kamarádi. Dva z nich už nejsou mezi námi, ale na pivovarském dvoře alespoň mají stylové památníčky.

Renovating the brewery to make it operational took two years, but in 2003, the first modern batch was brewed. In the initial years, as the building was still not accessible, the brewers held festivals in the town square and supplied a few local restaurants. The brewery restaurant reopened in 2009, and although it is still under renovation, I find it classy. The restoration is overseen by the Czech Historic Preservation Bureau, which means progress is slower than you might expect. However, the upside is that once complete, the building will resemble its centuries-old former self. And here's a quirky fact. The brewery is a popular wedding venue. I suppose it's fitting for a country where beer is more revered than religion! One ceremony was being prepared when we visited the yard.

Zprovoznění pivovaru trvalo dva roky, první novodobé pivo tak uvařil v roce 2003. Tehdy byla ještě budova nepřístupná, a tak pořádali jeho provozovatelé pivovarské slavnosti na náměstí a zásobovali několik místních hospod. Až v roce 2009 se podařilo znovuotevřít také restauraci. Její rekonstrukce sice stále ještě probíhají, i proto, že do ní zasahují památkáři, a tak se všechno vleče, ale interiér mi už teď přijde opravdu stylový. A po opravě by měl pivovar vypadat jako před dvěma sty lety. Mimochodem, na dvoře se často konají svatby, což je ve státě, kde je dost možná více alkoholiků než věřících, rozhodně adekvátní. Na jednu svatbu se dvůr připravoval i při naší návštěvě.

As I've mentioned, I appreciate the classy ambiance that harkens back to its appearance a hundred years ago. Now, let's find a seat and quench our thirst! The brewery brews three different Czech lagers

Jak už jsem zmínil, tenhle historizující styl mám rád, připomíná, jak to tu mohlo vypadat před sto lety. Ale teď už se usaďme a pojďme ukojit žízeň. Pivovar vaří tři různé ležáky.

Černá svině (Black Swine), 13° Dark Bohemian Lager
Black Swine has powers for sure. It is a proper strong dark lager you don't encounter often nowadays. Maybe it's due to my drinking it right at the brewery during a scorching summer day, but I doubt I could manage more than three. It is a coffee and caramel-infused dark lager with a pleasant finish of roasted malt. They also cook a boar goulash from it, which I'll make a point to try come fall.

Černá svině má teda sílu. Je to poctivý silný tmavý ležák, na který jen tak nenarazíte. Možná je to tím, že jsem ji pil rovnou u zdroje a v opravdu horkém letním dni, ale víc než tři bych asi nezvládl. Poctivé kávovo-karamelové tmavé pivo s příjemným chuťový dozvukem praženého sladu. Vaří z něj i kančí guláš, na který se tu musím na podzim zastavit.

Vycpaná vydra (Stuffed Otter), 12° Bohemian Lager
Otter is a bit of a playful brew, presenting a range of subtly herbal flavors and scents that stand as a testament to traditional Czech lagers. Its body is appealingly bitter, although the finish might be leaning a bit too heavily on the malty side. The aroma has a faint trace of brewer's yeast, counterbalanced by a strong presence of hops. All in all, a fine beer!

Vydra je na dvanáctku docela hravé pivo s pestrou paletou lehce bylinkových chutí a vůní, které jsou typické pro poctivé české ležáky. Příjemně nahořklé tělo, ocas možná malinko moc sladový. Vůně lehce po pivovarských kvasnicích a hodně po chmelu. Super pivo!

Dešťoffka (Rain Vater), 10° Bohemian Lager (There's a typo in the Czech name either)

Rain water carried a noticeable yeast scent, which I personally don't object to, especially when it comes from crafted beers. That being said, some people might find it pushes the boundaries. Despite being a reasonable brew, the pronounced yeast almost drowns out the hop notes, only letting the malt have its say on the palate. In terms of balance, it's not quite there. Otter seems to be a superior option to me.

Z dešťovky byly kvasinky cítit docela dost, což mně osobně nevadí, hlavně v malých pivovarech. Někomu by to ale mohlo přijít přes čáru. V každém případě je to slušné pivo, ale s těmi výraznými kvasinkami, které přebily chmelové tóny a na jazyk pustily jen slad, není moc vyvážené. Vydra je rozhodně lepší volba.

Všiml jsem si, že je @zirky na cestách, a tak bych ho chtěl vyzvat, aby se s námi podělil o nějaký pivní zážitek :) Mrkni na pravidla #beersaturday a zkus něco sepsat!
