Good evening to all the Hive friends. Egg roti is a popular dish in our country, and it can be made in various ways. It’s a comforting and delicious meal that can be enjoyed for breakfast, lunch, or dinner. However, today I have prepared it with a twist. Instead of following the traditional method, I’ve included an easy egg filling. This recipe has been created to enhance the flavors and texture of the egg roti while maintaining its essence. Although it’s a light meal, eggs provide a good source of protein, making it a nutritious choice.

Required Ingredients...
🍀 2 Egg.
🍀 2 finely chopped onions.
🍀 A few finely chopped curry leaves.
🍀 2 green chilli pods finely chopped.
🍀 A thinly sliced piece of Pandan.
🍀 some water.
🍀 1 cup of wheat flour.
🍀 Salt as needed.
🍀 1 teaspoon of chili powder.
🍀 1 teaspoon of tomato sauce.
🍀 1 teaspoon of curry powder.
🍀 1/2 Teaspoon of turmeric powder.
🍀 5 Tablespoon of coconut oil.
Method of making....
First, take a pan and place it on the stove. Add 2 tablespoons of coconut oil and heat it until it turns . Then, add onion , raw chili, curry leaves, and rampi (Pandan) to the pan and mix them well. Let it cook for about a minute.
Next, add turmeric powder, chili powder, curry powder, and soy sauce to the pan. Mix them well to ensure all the ingredients are combined. Cook for a few more minutes to allow the flavors to blend.
Next, add two eggs to the mixture and mix well until everything is combined. Allow the eggs to cook through and blend into the spices.
Next, prepare a batter using flour. Take a blender and add the wheat flour into the cup. To this, add 1/3 teaspoon of salt, an optional egg, and one tablespoon of coconut oil. Gradually add water while blending to achieve a batter that is neither too thick nor too thin but has a smooth consistency.
Next, take a pan and place it on the stove to heat. Lightly grease the pan with a small amount of oil. Pour a ladle of the prepared batter onto the pan, spreading it into a round shape. Allow it to cook until the edges start to lift slightly and the surface is set. Once it is cooked on one side, flip it to cook the other side as well. Continue this process until both sides are evenly cooked, as shown in the images below.
Next, take the prepared roti and add a portion of the egg mixture to the center. Fold the roti in half to enclose the filling. Cook it further, flipping it occasionally, until both sides turn a golden brown color. Continue this process for all the rotis, as shown in the images below.
