Yep it's... Hawk Tuah.. Tauron 😂 I have considered staying off-grid permanently, but in Polish conditions it's quite hard to make it work throughout the whole year. Between April and September, I think I would be able to live comfortably without any additional investment (however I would add another 5 KWh of battery capacity).
Between October/November and March, there's not enough sunlight to charge up the batteries and the power consumption is quite intense and have take into account that there's no PV production or it's close to nothing. My power generator would cover the demand, however it would burn ~30L of diesel daily. I'll leave the mathematics to you. In similar circumstances, the energy from power grid would cost 50% less. It's still significant, but paying for electricity $25 less daily, it really makes the difference.
Windturbines
As for windmills or wind turbines, I have considered them, but Silesia is not good for placing these. We're in unfavourable spot meaning in order to position it properly you need to conduct empirical research/audit on wind speeds, altitudes, constancy.
The second reason against them is their cost.
Of what I read, installing a one under $50k is a waste of money. The cheaper ones would either get worn-out bearings or they would not produce required energy due to winds being too weak.
Proper wind turbine needs to use gear and have enough windings to produce sensible amounts of electricity. This makes the initial cost way beyond my budget.
The third thing is that, that I do not have enough space to place it and I don't really know whether I would receive building permit. As far as I know, wind turbines up to 6 m high placed on buildings don't require a permit. But since constant winds are at altitudes of 40-120 meters above the ground level. My neighbours would kill me for placing the colossus on the block. My home wasn't designed for any of this, so everything I would place on the building requires a construction durability audit.
The next thing have a common ground with PV - there are periods of time without wind at all. So there's a risk you spend significant amount of money yet still you would need to burn fossil fuels. The Chatgpt.com told me:

So basically, this turbine will not produce any energy 80% of the time.
On the other hand, the Polish manufacturer Dospel released a pack of 3 1.5KW vertical turbines that can work with as weak as 1 m/s. The downside? Of course there is one - the cost of >$10k
Don't even get me started wondering where I would have been if I had 10 grands 😂 I already talked to a guy and no company in Poland does not guarantee that the investment will pay off, even though this graphic above says it should be piad of in 3-5 years with 8 years of technical guarantee. Also I will contact the manufacturer about it. I don't think it will be profitable for me (look at the power graph I found while lurking at Dospel's site)

Starlink
The starlink would solve the issue with external IP and ports, yes. However, its cost of $86 per month is expensive. The mobile operators offer is far better ($86 vs $20). I have put a request for internet at Internet.gov.pl portal and will ask local Internet providers if they would be interested in connecting me (and my neighbours potentially 3 more houses). I have also wrote e-mails to virtual mobile operators with an inquiry about ports blocking.
This all pretty theoretical as I am no expert here. Unfortunately it's hard to find experts in the topic. Even the company that installed my PV, heatpump and power generator are doing a forced off-grid installation for the first time. Because it's rather uncommon for our area to have power-grid free spaces like mine.
