In this post I want to share with everyone the food my wife cooked from the vegetable ingredients I grew in our home garden again. And I always tell with everyone that them are chemical free vegetables. Although there is not much area in the home garden, but I grow these vegetables just to eat and there are many kinds of vegetables in the home garden. One of those vegetables is bamboo shoots.
Two weeks ago my wife harvested bamboo shoots from the bamboo in the home garden. And she wanted to pickle this bamboo shoot to cook it other day.
How to make pickle bamboo shoot. She peeled the bamboo shoot, slice bamboo shoot and add bamboo shoot in a container.
Then add salt and water to the container to pickle the bamboo shoot.
Put the pickled bamboo shoot with salt water in a plastic bag. Then pickled the bamboo shoots for about 2 - 4 days until the bamboo shoots are sour.
Then put the pickled bamboo shoot in a container again and wash the pickled bamboo shoot. Can now cook food from pickled bamboo shoots. But my wife kept the pickled bamboo shoot in the refrigerator and cooked the pickled bamboo shoots other day.
When we had free time, my wife took pickled bamboo shoots from the refrigerator to cook. She cooked a red curry with pickled bamboo shoots and chicken. And she needed additional vegetable ingredients from the home garden : culantro, spring onion, kaffir lime leaves and turmeric.

- shallots
- garlic
- dried chilli
- shrimp paste
- chicken
- pork flavour seasoning powder

Ingredients
It's time to cook. Let's go.
First put garlic, shallots, dried chilies and turmeric in a mortar. Then crush them using a pestle and mortar.
Then put the shrimp paste in a mortar. And crush shrimp paste with other ingredients using a pestle and mortar again to make curry paste.
Put a pot on the stove and heat the oil. Then add the curry paste to the pot and stir-fry the curry paste until cooked and fragrant.
Then put the chicken in the pot and stir-fry the chicken with the curry paste until the chicken is cooked.
Then put water in a pot and boil until the water boils. When the water boils, add the pickled bamboo shoots in the pot and boil for a while.
Add the kaffir lime leaves in the pot and boil for about 20 minutes until the pickled bamboo shoots are cooked.
Then add the culantro and spring onion to the pot.
Boil for a while and turn off the stove.
Red curry with pickled bamboo shoots and chicken.
