Monday Blues

It's Monday all over again. Hope that your Monday is a good one so far!
Hope that you are not catching any Monday blues.
I guessed somedays life could feel a little bit on the heavy side sometimes.

What will you do about it to cheer yourself up?

It's been 10 months now since I have moved 67miles away from my parent's house to my very own place called home. I have found myself feeling very therapeutic every time when I cooked or create a new recipe for a very simple but yet delicious meal.
Just like today eventhough I am feeling Monday blues but creating a new recipe & cooking makes me feel happy again.

Here are two dishes that I have created today.

• Homemade Beef Omelette Burger
  To my surprised I would never expect it to be a success especially when it turns out to be so flavorful, delicious and juicy! The taste is so well balance too!

I've only used the most simple ingredients and it's lacking of so many ingredients that a basic burger should have such as tomato, lettuce & cheddar cheese.
I have only used these few ingredients that is big onions, eggs, marinated minced beef, cucumber, roasted sesame mayonnaise & chili sauce.
I guessed with the right cooking steps is what makes it delicious. Hehe

• Pumpkin Beef Broth Kuey Teow Soup
  This is also another recipe that I have discovered today for dinner.
  It's not your typical thick and creamy pumpkin soup but a light savory pumpkin soup that still has that soft chunks of pumpkin in it with a hint of aromatic beef flavor too. Soups are mostly my favorite comfort food to go to and today's dinner was that!
  It just hits on the right spot in my stomach. Yummy!
