This morning was a bit of a chaotic whirlwind for me. I had a very crazy and busy day yesterday. I almost didn't take pictures while cooking this morning because I overslept and woke up very late. I found myself trying to get everything ready at the same time. At the end I managed to prepare my daughter early for school and also packed her a nutritious veggie spaghetti for lunch.
So let's take a peek into how I made the delicious veggies spaghetti.
Ingredients
1 spaghetti (500g)
1 sachet of tomato paste
8 pieces of fresh pepper
1 clove of garlic
1 medium onion
20g of peas
100g of cabbage
7 pieces of medium sized carrot
30g of Green beans
½ teaspoon of turmeric
Salt to taste
½ cup of groundnut
Preparation
Place an empty pot on heat, add water to it, and allow it to boil; once the water has boiled, put your spaghetti in the boiled water and allow it to cook for three minutes.
After three minutes, drop the spaghetti from the heat and drain the water from it. Keep it aside.
Then I went ahead to rinse my veggies and chopped them into smaller pieces.
Put an empty pot on heat, pour your groundnut oil, and allow it to heat over medium heat. Then I added my chopped onion. Cook for two minutes until softened.
Then I added my tomato paste and blended pepper with garlic. I stirred it and allowed it to simmer.
I added my peas, chopped carrots, green beans, and cabbage, then I stirred.
I added a little water also and allowed it to cook for one minute.
After putting in a little water, I added half a teaspoon of turmeric and salt to taste. I stirred and allowed it to sit for 40 seconds.
Then I added my spaghetti and stirred everything together and allowed all the ingredients to mix together for two minutes on a low heat.
Drop it from the heat and food is ready.
I chopped the remaining cabbage and carrots that were remaining and served it by the side of the spaghetti.
