As I sit down to savor my favorite meal, the aroma of Amala, Gbegiri, and Ewedu fills the air, transporting me back to my childhood. This traditional Nigerian mostly Ibadan dish has been a staple in my life for as long as I can remember, and its rich flavors and textures never fail to leave me craving for more.

Amala, made from yam flour, is a thick, starchy paste that serves as the base of this delightful meal. Gbegiri, a bean-based stew, adds a burst of flavor and protein, while Ewedu, a leafy green vegetable, provides a refreshing contrast in texture. But what truly elevates this dish is the addition of inner parts of goat, ram, or cow meat, which adds a depth of flavor and tenderness that is hard to resist.

I can't pinpoint the exact moment when I first tasted Amala, but I know it's been a part of my life since infancy. My mother would feed me a soft Amala as a baby, and as I grew older, the flavors and textures became more complex and nuanced. Today, I relish every bite of this dish, and I'm eager to share its delights with others.

So, why do I love Amala with Gbegiri, Ewedu, and inner meat so much? For starters, the combination of flavors and textures is a symphony in my mouth. The slightly sweet Amala provides a comforting base, while the Gbegiri adds a savory, slightly spicy kick. The Ewedu adds a fresh, slightly bitter note that balances out the richness of the meat. And speaking of meat, the tender, slow-cooked inner parts of goat, ram, or cow are the crowning glory of this dish. Ths is a food that once you taste it, you'll always want more.

Ingredients:

  • 2 cups of yam or cassava flour
  • 2 cups of water
  • 1 cup of Gbegiri (bean stew)
  • 1 cup of Ewedu (leafy green vegetable)
  • goat, ram, or cow meat
  • Salt and pepper to taste
  • Vegetable oil for cooking

Instructions:

How to prepare Amala (Yam flour)

  1. Mix the yam flour with water to form a thick paste. Cook over medium heat.
  2. Stir constantly, until the Amala is smooth and lumps free.

How to prepare the Gbegiri (Beans pudding)

  1. Peel and wash the beans very well, then blend to smooth. 2. In a separate pot, pour the blended beans with water to cook the Gbegiri for 30mins max.
  2. Add seasoning and salt to taste , allow it cook very well and set aside.

How to prepare Ewedu (Jute leaves)

Pick the Ewedu leaves, rinse and blend it until the vegetables are tender, cook in a separate pot and add salt to taste.

How to prepare the soup

  1. Cook the meat parts in a separate pot until tender, then add the boiled pepper then let it boil for few minutes.
  2. Add palm oil, maggi, salt and cover to cook very well.

How to serve

Serve the Amala with the Gbegiri, Ewedu, and the soup and meat mixture.
