How was your Thanksgiving celebration?
I wasn't going to have a second get-together, but... it is what it is!
However, I would like to show you how I cooked everything from scratch. Of course, you should have all the ingredients to cook your meal.
Let's start with the turkey. I spatchcock the turkey the night before. Refrigerating the turkey uncovered results in crispy skin when roasted! Oh, and I salted the turkey.
Although spatchcocking won't produce the ideal whole roasted turkey presented on your most attractive dish, it will produce flesh that is juicy and moist, roast it faster, and produce skin that is crispier.
First I place the thermometer in the thickest part of the turkey, which is the breast of the turkey. I sprayed it all over with oil, and then a generous amount of fresh ground pepper.
Put the turkey in the middle rack, and roast it at 400 degrees F, until the thermometer reads 150 degrees.
The term "spatchcock" sounds amusing. It's a method that simplifies and cuts down on the time required to cook poultry. It is a technique, not a recipe.

Carving the turkey is easy!
1. Remove the leg and thigh.
2. Remove the breasts. (I am reserving the wings for something else. Otherwise, remove the wings second.)
3. Slice the breast.
Place the breasts skin-side up on the cutting board and cut across the breast meat into 1/2-inch-thick slices.
For my purpose, this is sufficient!
