Meat reduction week

The 10 year old often defines what our menu is going to be for the week and she pulled a corker this time around. She's really conscious around animal welfare and wants to eat less meat. I lobbed a few recipe books in her direction on Saturday and here are two of the top picks.

Curried broccoli and paneer

So simple to make and surprisingly filling. I added some brown rice and a shop bought dahl for ease. The broccoli was almost buttery in flavour although still crunchy in texture. Delightful.

Tofu and mushroom ramen

Tonight's supper was a tofu and mushroom ramen made with wheat noodles. It's the first time I've cooked with dried mushrooms (I used porcini), and also a first with miso. The broth was full of flavour and I couldn't make my way through the portion. Missing is roasted cashew nuts which I got around to adding before slurping away.

Unfortunately I didn't do a good job of frying the tofu to a golden colour as suggested, but still had a bit of texture and absorbed the broth.

We've had some great veggie meals from Gusto that are not hard to cook. I think many people could do with eating less meat and it's an easy win for the environment. We have a fair bit of tofu and the Tofoo versions are even more convenient.

what's the recipe for the broccoli, it sounds delish.

I'm still making my mind up about tofu, it always reminds me of putty. I think it was okay crumbled, smothered in many tasty things and roasted for a bit. I had it in tacos and threw it in a chilli.

I get on with tempeh, though, quite like that 😍

Cut a large head of broccoli into florets (cut large ones in half - you can also trim the stalk down and slice). Add to a pan of boiling water for around a minute - minute and a half. Drain.

Slice paneer into cubes (200g) and fry, turning until nicely coloured (couple minutes). Add around 10 cherry tomatoes (halved) and the broccoli wok and stir fry for a few minutes. Sprinkle in a crushed/grated clove of garlic, some chilli flakes (amount to your taste), 1 tsp of garam masala or medium curry powder. I used a tsp of garam masala and added 1/2 teaspoon of curry powder. Stir fry for another couple minutes.

Season with lemon juice and ground black pepper.

It's meant to serve 3 at around 345 cals a portion.

That sounds lovely and quick and easy to make!

Absolutely, under 10 mins of preparation and about 7 mins to cook. I was honestly surprised how good it was. Would probably take some coconut milk or other simple sauce if a saucy curry is a preference.

I'm tending to buy a broccoli head and cut and cook it in one go, usually in the microwave. I inherited a super little microwave container with a tray with handles, an inside perforated tray to hold food and then a domed, vented cover. It's great for vegetables with a tablespoon of water added in the bottom tray. I pull out broccoli portions over the next day or two and add them to what I'm making or concoct something lovely like this - perfect.
