Me complace estar esta semana con ustedes compartiendo algunas de mis recetas, el día de hoy quiero traerles una receta muy popular en Venezuela, se trata del sabroso hígado encebollado. Una receta muy popular acá en Venezuela, la cual se remonta a la Venezuela colonial, pero que aún continúa muy vigente en nuestra gastronomía.

I am pleased to be with you this week sharing some of my recipes, today I want to bring you a very popular recipe in Venezuela, it is the tasty liver with onions. A very popular recipe here in Venezuela, which dates back to colonial Venezuela, but still very much alive in our gastronomy.
Hígado Encebollado.
Este delicioso plato está cargado no solo de historia sino también sabores, olores y energía, pues el hígado de res no solo proporciona proteína, también es una fuente rica de vitaminas y minerales entre los que destacan el hierro, la vitamina C, Vitamina B12, B6 y calcio los cuales son esenciales para nuestro cuerpo.Liver with onion.
This delicious dish is loaded not only with history but also flavors, smells and energy, because beef liver not only provides protein, it is also a rich source of vitamins and minerals including iron, vitamin C, vitamin B12, B6 and calcium which are essential for our body.
Entre los ingredientes que ocuparemos son:
- 500 Gr de Hígado de Res.
- 2 Cebollas grandes (cortadas en juliana)
- 10 dientes de ajo (5 dientes para el hígado y 4 para el arroz)
- 1 pisca de curri
- Salsa de Soja.
- Salsa Inglesa.
- Azúcar.
- Sal.
- Aceite.
Among the ingredients we will use are:
- 500 grams of beef liver.
- 2 large onions (cut into julienne strips).
- 10 cloves of garlic (5 cloves for the liver and 4 for the rice).
- 1 pinch of curry
- Soy Sauce.
- English sauce.
- Sugar.
- Salt.
- Oil.
Procedimiento.
Luego de cortar nuestras cebollas procedemos a ponerlas en un sartén con aceite caliente, agregamos sal y azúcar para que se vayan caramelizando nuestras cebollas.First we crush the garlic cloves, then we cut our onions in julienne cut, this will allow a more uniform cooking and an ideal caramelization.
Mientras tanto cortamos nuestro hígado en láminas largas. Una vez hayamos cortado nuestro hígado y nuestras cebollas estén caramelizadas, procedemos a colocarlo junto con las cebollas.
After cutting our onions we proceed to put them in a pan with hot oil, add salt and sugar to caramelize our onions.
Meanwhile we cut our liver in long slices. Once we have cut our liver and our onions are caramelized, we proceed to place it together with the onions.
Add a pinch of curry along with soy sauce and Worcestershire sauce. Stir a little to incorporate everything and cover and let it cook for approximately 15 minutes over medium heat.
Pasados esos 15 minutos y revolviendo constantemente nuestro hígado, habrá adquirido la cocción ideal, bajamos del fuego y dejamos reposar en su salsa caramelizada de cebollas.
After those 15 minutes and stirring constantly, our liver will be cooked to perfection, we take it off the heat and let it rest in its caramelized onion sauce.
Acompañantes del plato.
Para el arroz.
- 2 tazas de arroz
- 4 tazas de agua
- Mantequilla
- 5 dientes de Ajo
- Sal.
Accompanying the dish.
For the rice.
- 2 cups of rice
- 4 cups of water
- Butter
- 5 cloves of garlic
- Salt.
We put in a frying pan a little butter to melt, then add the 5 cloves of garlic left over, add our rice, fry a little and then add the water, cook over high heat for 10 minutes.
When we see that the rice begins to form some holes is the indication to place it over low heat until all the water evaporates.
Los platanos.
- 2 platanos grandes.
Bananas.
- 2 large bananas.
We cut our plantains into slices, add oil to our pan and place them to fry, when they acquire the characteristic golden color we turn them over and wait for them to cook on the other side.
Ensalada.
- 1 Repollo
- 1 Zanahoria
- 1 Cucharada de mayonesa
- 1 Pizca de azucar y sal.
Salad.
- 1 cabbage
- 1 carrot
- 1 tablespoon of mayonnaise
- 1 pinch of sugar and salt.
Ahora emplatamos y disfrutamos de este delicioso plato lleno de proteínas y energía.
We cut our cabbage in long slices, with the help of the grater we chop our carrot, add mayonnaise, salt and sugar (if we add a little mustard our salad will be much better) as I didn't have mustard I left it like this.
Now we plate it and enjoy this delicious dish full of protein and energy.
