Hello! In this post I would like to show you a recipe representative of Turkish cuisine. Cigarette Burek. Last week we went shopping to Edirne and from there I bought fresh triangular peels, which are very suitable for today's recipe. Crispy but airy the little patties have a variety of fillings. Most often they are made with cheese or with cheese and something "green" for example parsley, dill, spinach, green onions, etc. If you put cheese or egg they will not be so airy, but they will still be delicious. If you use salted cheese, it must be dry, otherwise the crusts get moist and the patties won't be as crispy. Granted, they are fried and not the healthiest patties, but on the other hand they fry up in a snap and don't get very oiled. However, if you're a health-conscious person, you can always put them in the oven to bake by brushing the top with egg and sprinkling with sesame seeds if you like.
And to briefly introduce how I make them:

The outputs you will need are:

  • 1 package of triangular crusts
  • oil for frying/baking
    For the filling I used:
  • about 150-200 grams of salami
  • 100 grams of cheese
  • 100 grams of mayonnaise
  • 100 grams of processed cheese

Preparation:

First I prepared the filling. I cut the lettuce into cubes. I grated the cheese and mixed everything.

I placed the crusts with the wide part towards me to make it easier. Then with a small pot I poured water. I put some of the filling on the end of the wide part of the crust. I folded over both ends and then the wide part and started to roll. I dipped the sharp end of the crust into the bowl of water so it would stick.

I heated oil in the pan and fried the patties until golden on all sides. Then I placed them briefly on kitchen paper to soak up the excess fat. If you decide to bake them in the oven, I'll repeat myself again, be sure to brush the top with egg wash, and when rolling up, brush each crust with a thin layer of cow butter. Bon appetit!

¡Hola! En este post me gustaría mostraros una receta representativa de la cocina turca. Cigarrillo Burek. La semana pasada fuimos de compras a Edirne y allí compré cáscaras triangulares frescas, que son muy adecuadas para la receta de hoy. Crujientes pero aireados, los pequeños pasteles tienen una variedad de rellenos. La mayoría de las veces se hacen con queso o con queso y algo "verde", como perejil, eneldo, espinacas, cebollas verdes, etc. Si le pones queso o huevo, no quedarán tan aireados, pero seguirán estando deliciosos. Si usas queso salado, debe estar seco, de lo contrario la corteza se humedecerá y los pasteles no quedarán tan crujientes. Reconozco que son fritas y no son las tortillas más sanas, pero por otro lado se hornean en un momento y no quedan demasiado grasientas. Sin embargo, si eres una persona preocupada por la salud, siempre puedes ponerlos a cocer en el horno, pincelando la parte superior con huevo y espolvoreando con semillas de sésamo si lo deseas.

    Para el relleno he utilizado:

Preparación:

Primero preparé el relleno. Corté la lechuga en cubos. Rallé el queso y lo mezclé todo.

He colocado las cortezas con la parte ancha hacia mí para que sea más fácil. Luego, con una cacerola pequeña, vertí agua. Puse parte del relleno en el extremo de la parte ancha de la corteza. Doblé los dos extremos y luego la parte ancha y empecé a enrollar. Sumergí el extremo puntiagudo de la corteza en el bol de agua para que se pegue.

Calenté aceite en la sartén y freí las tortillas hasta que estuvieran doradas por todos lados. Luego los coloqué brevemente sobre papel de cocina para absorber el exceso de grasa. Si decide hornearlos en el horno, de nuevo repetiría, asegúrese de pincelar la parte superior con huevo, y al dar la vuelta, pincelar cada corteza con una fina capa de mantequilla de vaca. ¡Buen provecho!
