Dulce de Lechoza or Papaya is a delicious and original Venezuelan dessert that has crossed our borders and that every day many people who try it venture to prepare it.
Para elaborar este delicioso postre es realmente fácil, pero tiene unos tips muy importantes que se deben considerar para lograr que quede la textura y consistencia perfecta.
En el Libro de Recetas de mi madre, el cual perfeccioní durante años, logró alcanzar esa consistencia que tanto buscamos para que nuestro Dulce de lechoza quede cristalino y "al dente".
In my mother's recipe book, which I have been perfecting for years, she managed to achieve the consistency we are looking for so that our Dulce de lechoza is crystal clear and "al dente".
Es importante destacar que no nos debe de faltar los clavos especies que le suministran un excelente aroma a nuestro postre.

- La lechoza o Papaya debe estar lo mas verde posible, entre mas verde mejor, asi decía mi mamá. - Por cada kilo de lechoza se agrega la misma cantidad de azucar.
Among the most important tips as far as the ingredients are concerned are the following:
- The lechoza or papaya should be as green as possible, the greener the better, as my mother used to say.
- For every kilo of lechoza, add the same amount of sugar.
Además al momento de llevarla a la cocción " No se le coloca nada de agua"
Once you have removed the rind from the lechoza, you must wash it very well to remove any residue that may be left by the milk released from the lechoza.
Also at the moment of cooking " Do not add any water".
Leave on a very low heat and cover, stirring from time to time, you will see how the lechoza itself generates enough water to create the ideal caramel for the dessert.
Usualmente este postre dura alrededor de 1 hora para alcanzar su cocción perfecta, pero lo mas importante es que al introducir un tenedor y lograr la consistencia deseada se debe retirar del fuego y dejar enfriar.
Remember to add the cloves, spices and vanilla essence once the dessert has enough liquid.
This dessert usually takes about 1 hour to reach its perfect cooking time, but the most important thing is that when you insert a fork and reach the desired consistency, remove from the heat and let it cool.
