Hello hive food lovers,
Let me share my recipe for today and the same time my entry for the Top Hive Chef competition, my very own 'roasted duck' recipe.
Since ducks are very abundant in the Philippines, which it is just easily to raise at home and don't need enough time and money inorder to be raised, it's because they just roaming around the backyard to look for their food.
And when it was no viand on the table then I have some ducks at home, so, viand will be automatically solve.
So for the start with my recipe, which this are my ingredients;
Ingredients | Quantity |

Duck | 1 whole dressed body |
Lemon grass | 5 stalks |
Spring onion | 5 stalks |
Onion | 1 whole piece |
Garlic | 1 whole garlic |
Magic sarap seasoning | 1 sachet |
Soy sauce | 1 sachet |
Salt | 1/2 teaspoon |
Lemon | 10 pieces |
And then proceeding to my preparations.
Preparation procedures:
Step 1:
• put the pan with water to the fire and let it boiled.
Step 2:
• put the slaughtered duck into the boiled water inorder to moisten and extract easily its feathers.
Step 3:
• then get it after boiling, and started to extract the feathers.
Step 4:
• and when it is clean and no more feathers, wash thoroughly with water.
And now, my marination procedures.
Marinating steps:
Step 1:
• insert the bundled lemon grass inside the clean duck whole meat.
Step 2:
• put the five stalks spring onion leaves inside the clean duck whole meat.
Step 3:
• put the sliced onions inside the clean duck whole meat.
Step 4:
• put the flattened garlic inside the cleaned duck whole meat.
Step 5:
• put the half sachet magic sarap all around seasoning.
Step 6:
• add the half teaspoon salt.
Step 7:
• add the half cup of soy sauce.
And then the wood insertion procedures.
Wood inserting procedures:
Step 1:
• insert the wood branch inside the clean whole duck meat until to the mouth.
Step 2:
• tie the feet and the leg with a wire or roasted rope.
And lastly, the cooking procedure.
Cooking proceudres:
Step 1:
• fire a charcoal and let it fired.
Step 2:
• put the marinade whole duck meat with wood twigs into the fired charcoal.
Step 3:
• cooked for about one hour.
Step 4:
• almost done and extract it from the wood twigs.
Step 5:
• finish alredy, and ready to eat.
For the conclusion, roasted duck is so delicious, the skin are very crunchy and it was really a mouth-watering.
