Fresh From The Garden

Garden Fresh Veggies Are Always Delightful ..

It’s a humid, warm and foggy morning here in the southern parts of New Jersey.. and I can hear the birds waking up. Chirping and whistling can be heard through the thick clouds of moisture. I can also hear the hum of a train engine 2 1/2 miles away. It is amazing how sound carries through the heavy mist. I pour myself a cup of coffee and head outdoors anyway, to take a walk to the garden to see how things are growing. The veggies growing there don’t seem to care much about the fog or the noise. All they really seem to want is the sunshine, the warmth and an occasional sprinkle of rain to keep their feet wet. At first glance, they appear to be quite happy.

Looks Like We Have Something To Pick..

I pulled back the leaves of our zucchini plant to reveal the seasons first harvestable vegetable. A nice plump, perfectly green zucchini. If I would’ve left it on any longer, it would’ve gotten too big to eat. It always amazes me how fast the vegetables can go from perfect to too big to eat, in a matter of a day.

A gentle twist, and the vegetable snaps at the stem and is removed from the mother plant. At the time, I was concocting a dozen ways to utilize this first very first vegetable from our garden. I did settle on the perfect way to utilize it and will share that with you a bit later.

The yellow squash plant is also looking good. It looks like I will be picking one of those very shortly. (Update: I did end up picking a yellow squash) I counted well over a dozen small squash that are forming. It looks like the flowers have been fertilized, and vegetables are growing. I can foresee that we will have more than enough to eat, and will probably get tired of eating squash by the middle of July. I’m sure I’ll be giving away some of these vegetables to our neighbors.

We are also growing some burpless, seedless cucumbers. I purchased only one plant knowing that one plant usually produces a ton of cucumbers. No way will I eat that many cucumbers. So far the plant looks good and I see at least five or six cucumbers already taking form. One is very close to needing to be picked.

This year we purchased all of our plants from our local high school. The school has a horticultural program where the kids, including my niece, raised these vegetable plants. I figured this is a great way to support the local youth/school/program. Maybe they weren’t the best looking plants, but they are growing fine and filling out nicely.

Along with the squash and zucchini, I Purchased, roughly 8 string bean plants. They didn’t look too hot at all, but they are beginning to hit their stride. I see a bunch of flowers on the plant and even a few early beans can be seen. Looks like it won’t be long until we even have an enough beans for a meal. I can’t wait because fresh beans from the garden always taste so much better than the frozen store-bought type.

I never really gave it much thought but these string bean flowers, although simple, are quite pretty. They almost look like a little purple purse. They are by no means a flashy flower at all, however, they have the perfect charm to to make their subtle statement in our garden.

It Been HOT!

The temperatures have been rising, and Molly is quite content laying on the couch in an among her blankets and pillows, where it is cool and quiet. She will occasionally venture outside to do her business, and acts like she likes it out there, but soon returns home, panting from the heat. We keep her refreshed with plenty of water, and make sure the air conditioning is keeping the interior of our home at a more acceptable temperature for a puppy her age. She can’t spend too much time in the sun anyhow, due to the high levels of steroids that she is on for her Addison’s disease. Her skin will burn rather quickly, and she has very thin hair to begin with.

It’s not long before she jumps off of the couch and comes into the kitchen where she hears me preparing tonight’s meal.

She quietly stands and stares up at me, wanting a hand out.. However, I know everything that I put down for her to eat, she will turn her tiny black nose away from. She always wants some, but is always hoping for something better than what I have to share. The vegetables were no different than anything else.

So what did I decide to cook up with our freshly picked veggies?

Home Made Pizza On The Grill!!!

After thoroughly washing our zucchini and squash, I shredded them into spaghetti like pieces. and because our garden didn’t contain every single thing we wanted on our pizza, we had to take a trip to the store, where we purchased some sweet tomatoes, baby spinach, red onion, broccoli, and of course, pizza dough.

I worked right on the counter, spread out some flour and began kneading the pizza dough into a nice almost round shape. I had all my cups filled with the shredded zucchini, shredded squash, red onion, cut tomato, and broccoli. Most of these items I pre-cooked on the stove top in order to soften them up. We like our vegetables on the softer side so we pre-cook them. If you’d like them a little crunchy, then you may just want to throw them on top as is.

We made two white pizzas with fresh mozzarella.. After about five or 10 minutes on the hot grill …

Voilà! Dinner is served

For the rest of us who don’t eat pizza, and most certainly do not eat onion, ICE CREAM was served!

A cool treat on a hot day sounds perfect.. At least to Molly it does. By the way, the other day, she told me to ditch the garden and buy a cow. And here all along, I didn’t think she really knew what you needed in order to make ice cream.

Hahahahahaha… oh, Molly, you are just too funny.

That garden looks great, nothing like home grown vegetables! That looks like some really good pizza. I bet it's hot and humid there these days, I used to love going to southern NJ when I lived in Philly, Cape May has always been one of my favorite places there. Molly sure looks happy though!

Absolutely! Yummm. And yes the heat is on. It's summer so I don't mind it and I hate the bitter cold winds of January worse. lol. Cape May is about 45+ minutes from our place. It's just so far down and a few of the roads are slow, so it take a bit to get there. Very fun and chill town for sure.

Thank you and thank you for the tip too! Can't beat fresh organic veggies. I wish I had time for a larger garden, but it is just the right size for us this year. Felt good to grow them and then incorporate them into a meal. It surely felt good. and tasted good too 😁

You all on Hive make farming or working in the garden look so easy and interesting, how do you guys enjoy doing all the hardwork? I guess seeing what you actually produce from your farm or garden overshadows all the stress you had to go through to achieve the great feat.

Setting up the garden years ago was the tough part. Now I just till it and weed occasionally. Planting and watering is not so bad. We have a lawn and I cut the grass and put the clippings onto the empty soil. It helps to prevent too many weeds thus making it easier. Thanks for stopping by and reading!😁

Gardening can be fun and relaxing.. I can see why you miss it so much. Depending on where you are in Canada, a green house is almost needed. Some parts I know stay cold for such a long time.

Such things, when a person brings them from time to time, when they are fresh, their benefits are much greater. All these flowers and plants looks so beautiful and molly looks also very dashing.

That's cool that your local high school has a program like that. I am actually surprised that ours doesn't given how big of a farming community we are. The pizza looks delicious! The weather has been nuts lately. The humidity has been over 90% pretty much every morning when we wake up. The the air just gets oppressive. I think we finally have some relief in sight. My wife snagged some zucchini from her parents house the other day. We didn't plant anything but garlic this year.

Pizza was good. I think the bottom was a bit darker than I would have liked, but I'll tweak things next time. Past few days have been brutal here. Then it rained about 3-4" yesterday afternoon. That was fun. How is the garlic looking?

Pretty sad based on the amount of rain we have gotten. This next week's looks like we could have a revival.

Hi, Brad!! Look at that garden grow! It is really showing off for you. When I am bursting at the seams with tomatoes or zucchini or squash, the regular culprits, I cook it up and vacuum seal the extra, and put them in the freezer. Then I still get fresh goodness in the dead of winter. That works with corn too, I like to buy it right at the farm. I steam it and cut it off the cob when it is done - putting a few ears in each bag, enough for a meal. In January, I am eating that fresh corn and it tastes just like I picked it.

But, you probably already do that.

I share with some of my neighbors, but their gardens are all bigger than the one I have at the Shore House. It is a few hours from my house near DC, so I need to keep it smaller. My neighbor turns on my sprinklers for me! How nice is that?

Your beans look pretty good! I like that the school involves the students in life skills. This is how the love affair with gardening and homesteading begins. Everyone needs a good helper like Molly. Gosh, Brad, she looks really good. Can you blame her for needing a handout? Sometimes I need a handout! :) Whatcha serving? Hehe... It has got to be better than the handouts here.

Yes! We do that with the veggies.. blanch and freeze for winter. And your right, it does taste just as if it was picked the day before. Have you gotten to spend some time at the shore hose this summer? I remember you put quite a bit of money into the roof and other repairs/maint the last time I read something. I am sure it is looking just lovely there. Molly is a fantastic helper. haha. At her age we give her whatever she'll eat. With her doggie dementia and whatever else is going on in her head, we try anything and everything. It takes about 20-30 minutes twice a day, to try and get her to start eating. uggggg.. Oh well. We are all doing our best with the heat, smoke, and rain. looks like more rain today and definitely tomorrow.

I love to spend time there, most weekends and time off. I enjoy it all year round, but especially in the early and late summer. The other times are nice, but, more crowded getting in and out to go home. :) I am sure you know what I speak of. The roof was expensive but, we have had the house a long time and it deserved it. Plus, it really needed it! LOL Repairs will always be with a house that is over 150 years old, but, only if you want to keep the original hardware/floors etc... And yes, it looks lovely to me. I love old houses. They have so much character. Although the main house here was a new build because I can only take one house that needs work. :)

You have a great helper and all the other things that are going on with her are just part of the package. It is built in with the love you have for her. Patience. You really do have it. 💙 You aren't going to get Molly a friend? Sometimes having a friend makes it easier for them. Oh, yes. This heat/rain/smoke thing has got to go away!

I am so lazy and apologies for not being here more often. Life has been busy and I post my Market post and that is it! But, it is getting a little easier with time so I may even post tomorrow again!
