Banana & Carrot Bread
I'm starting to cool off the strict keto diet, now that I've reached my bodyweight goal for now. I'm starting to re-introduce a little bit of carb, but healthy ones, to see if I can maintain things the way they are. I would not have made this kind of bread, because it's too sweet, on keto.
I guess this will be classed as "Paleo", which is similar to keto, but with allowance for some natural sweeteners like bee honey an carrots, both of which are in this bread.
I burnt it a little bit, as you can see from the crust, but it actually added some character to the taste I think. It went perfectly with my coffee in the morning.
This is sweet enough to eat by itself, or with a layer of butter or cheese, and a nice cup of coffee or tea.
In addition to carrots and honey, I added a few raisins for taste. Not much, but enough to taste. The almond 'flour" used here is also really almond "meal" since it's not powdery smooth, but rather granular and a little crunch. As such, the bread is closer to a cake or muffin than bread in texture.
