For this delicious carrot cake, I used 250 g carrots, a pinch of salt, tsp lemon zest and about 200 g almonds with 70 g wheat flour and 2 tsp baking powder.
Preheat the oven to 180 degrees For the dough, grate the carrots. Mix the finely grated carrots with a little lemon, the grated lemon zest, flour, almonds and baking powder.
After that separate the 5 eggs mix the egg yolks with 150 g sugar and about 2 tbsp water, beat the egg whites until stiff. Add the carrot and flour mixture to the egg mixture and stir briefly. Fold the egg whites into the batter. Bake the cake in the preheated oven for about 45 minutes. Very delicious!
