Since focusing on a healthier lifestyle from the previous year, I have paid more attention to the ingredients of the food I make. Especially sugar and flour, as well as oil.
I also focus more on foods that have protein content, compared to those that are only high in carbohydrates. So, when I want to eat cake, I will think about cakes that are high in protein.
Indeed, making your own cake is the best choice that is healthier. We can adjust the ingredients that suit our bodies, especially sugar and flour intake.
I will share a strawberry banana cake that is flourless, and also has little sugar. This is suitable for those of you who are trying to reduce your flour intake. In fact, you can eliminate brown sugar, and replace it with other additional sweeteners such as stevia.
Instead of flour, here I use oatmeal. Indeed, the texture of the cake will not be as moist as those using flour. But this cake is still soft and delicious, especially for those of you who don't really like sweet cakes.
THE INGREDIENTS
- 1 cup of mashed ripe bananas
- 1/2 cup of oatmeal
- 2 eggs
- 200 grams of strawberries
- 2 tablespoons of brown sugar
- 1/2 teaspoon of baking powder
- 1/2 teaspoon of salt
COOKING INSTRUCTIONS
STEP 1
Prepare ripe bananas. Overripe bananas are also fine. I used local bananas.
Mash with a fork. Here, I only used 1 cup of mashed bananas. Set aside.
STEP 2
Also prepare strawberries. Soak strawberries first with salt for about 15 minutes.
After soaking strawberries, then mash with a fork. Set aside. Do not forget to left some strawberries for cake topping later.
STEP 3
Prepare a large bowl. Then, crack the eggs.
Then, add baking powder, brown sugar, and salt. Beat the mixture of ingredients using a fork until well blended.
STEP 4
Add mashed bananas and mashed strawberries. Mix well.
Then, add oatmeal. Mix well. Don't forget to preheat the oven to 180 degrees.
STEP 5
Prepare a baking container. Transfer the cake batter to the baking container. Don't forget to use baking paper so that the cake is easy to remove later.
Add strawberry pieces or chocochips to taste or chocolate pieces for extra topping.
STEP 6
Bake the cake batter for 45 minutes, or test using a toothpick. If the toothpick doesn't come out clean, bake for another 10 minutes.
Take the cake out and let it cool. When the cake is hot, it will still be soft and not good to cut. So, it's best to let it cool down.
THE RESULTS
A beautiful strawberry banana cake, with a tempting texture. Despite the fact that this cake only uses oatmeal, not flour.
Would you guys like to try this cake? For me, the sweetness is just right. If you feel it's not sweet enough, you can even add honey. See you at my next food blog!
