Today I was going to cook something with beef, but I wasn’t sure what exactly. Finally I decided to cook it with potatoes. The only thing was that I wanted to cook potatoes separately because I wanted them to be country style (that’s what I think it is). Another reason is that I needed one portion to be vegan.
Ingredients
Beef - 1.5 lb
Medium onion - 1
Medium carrot - 1
Mini bell peppers - 3
Garlic -2-3 cloves
White mushrooms - 1 small pack
Washed potatoes - 8
Green onion
Salt
Avocado oil for cooking
- First I heated oil in the pot. Then added some precut meat, let it cook for about an hour. The meat should almost ready before I add veggies. Then I add chopped onion, let it cook for about 10 minutes. I added carrots and cooked another 10 minutes. Last ingredient I added was bell pepper, salt, and cooked another 5 minutes.
- While meat was cooking, I washed and scrubbed potatoes. Cut them into halves and boiled for 10 minutes. I let them cool down. Then cut them into smaller slices (1/4 in). I heat oil in the skillet, then add potatoes. I cooked potatoes until they turn golden (yellow). Then salt a little bit.
- When potatoes were done I sautéed sliced mushrooms and some garlic in a small amount of oil.
I was so impatient and hungry that I had my lunch before kids came from school.
Here is kids version. I added green onions here, they like it.
Here is my husbands (vegan) version.
