Coconut Steamed Banana

Hello everyone!
Today it's raining non-stop, time doesn't feel like time is running fast, from morning I just looked at the rain without stopping. Thinking for a moment to reflect while saying 'when will the rain stop', I really want the rain to stop because I don't have proper food to eat.



Rain make me hungry and angry

My husband was in the room struggling to beg for food, I told him 'be patient, wait for the rain to stop then I'll go to the shop to buy groceries'. It was already 10:00 am. Indeed, we were 2 hours late for breakfast. Because usually I have prepared food in an hour at 07.00 am.

It really didn't stop raining, until my stomach couldn't stand the pain. My stomach started to rumble, it looks like an anaconda is demonstrating for food. I thought the rain would stop soon. Then my husband came out of the room. He said that there was a mother's deposit on the motorbike seat, yesterday my mother left a bunch of kepok bananas. Then I was angry all day because of my husband's stupidity. If only he had given me these bananas this morning, maybe we wouldn't be starving like this.

So that I don't get upset all day, I go straight to the bathroom and wash my face to look fresh and my anger subsides. I took a deep breath, let my blood flow cold. So that my husband doesn't become a tantrum all day long. In my mind, I wanted to dry him under the heavy rain, but I thought again not to do it because he would be sick, and I would be bothered to take care of him.

While making peace with my emotions, I also thought about how this banana can be eaten deliciously like a filling breakfast. Since it's only a half-ripe banana, what should I cook?

Then I remembered a food I had eaten 3 weeks ago, when my husband's grandmother passed away, someone came to give us food as a donation to celebrate grandmother's death. So it looks like I'm going to make those coconut steamed bananas.



Ingredients:

Only uses 3 ingredients, namely banana kepok, coconut and sugar. And also I use pandan leaves as fragrance, you can skip it if you don't have it.

How to make coconut steamed banana:

  • Prepare the ingredients, coconut and banana can be steamed in one place. I use grated coconut.

  • Take out the steamed coconut, then mix it with 2 tablespoons of sugar.

  • Peel the banana and cut it into 2 parts.

  • Coating bananas with coconut sugar on top.

I'm grateful that I have grated coconut in the freezer. I remembered that I would use the coconut to make traditional food. But in making it I failed and the coconut became a remnant that will be used later.

For the kepok banana that I use, this is a gift from my aunt who is in Sergai City, yesterday she left bananas to my mother for me to process. Because my aunt said I always needed a lot of ingredients for a recipe, so she helped me to process a recipe from bananas.

I am grateful to be surrounded by good people. They think of me and are kind to me, somehow it seems that kindness will surely be returned with kindness. Because my aunt gave me a lot of bananas, I think I will give this banana to my neighbor, because tomorrow I happen to be going on vacation to Sipirok and I'm afraid these bananas will rot and make the house smell bad.

It too sweet, banana with grated coconut is best way to enjoy breakfast, but i think kepok banana it so difficult to find..

Simple but tasty recipe. We also make that in the Philippines but usually, we don't steam the coconut because we always use freshly grated coconut for that kind of recipe.

Steamed bananas because this type of banana is only suitable for steaming to bring out its sweet taste, indeed the type of banana I use only exists in Indonesia, but I also don't understand this banana..
