Green Crackers | Wild Food Foraging

Crackers are easy and inexpensive to make. I like to add herbs, seeds and kosher salt to it.

Ingredients:

  • 100 g of wild garlic
  • 200 g of all-purpose flour
  • 1 teaspoon of baking powder
  • 80 g of margarine (cooled in a fridge)
  • 80 g of vegan yogurt
  • ⅔ teaspoon of fine sea salt
  • 2 tablespoons of melted margarine
  • ⅔ teaspoon of kosher salt
  • 1 tablespoon of flax seeds
  • 1 tablespoon of sesame seeds
  • wild garlic flowers
  • rosemary twigs

Preparation:

  1. Pick a few wild garlic leaves and flowers.IMG_20220423_172628.jpg
    Place the leaves in a pot and pour boiling water over it.

    Drain it right away.

  2. Blend it until it becomes a smooth puree.
  3. Sift the flour with the baking soda through the sieve. Add wild garlic puree, ⅔ teaspoon of fine sea salt, vegan yogurt and cooled margarine.

  4. Knead the dough as fast as possible, not to add too much flour, the dough should stay sticky.

    Wrap it up in foil and place it in a fridge for at least 3 hours, or preferably overnight.
  5. Place the dough between two sheets of baking paper, lightly dusted with flour.IMG_20220424_124907_1.jpg
    Flatten the dough with a rolling pin. The dough should be very thin, about ½ centimeter, otherwise it will come out like a flatbread.
  6. Cut it with a pizza cutter or a sharp knife.

    Brush it with melted margarine.

    Sprinkle with seeds and kosher salt and decorate with fresh rosemary twigs and wild garlic flowers.IMG_20220424_131231.jpg
  7. Place it on a baking tray and put it in the oven at 200°C for about 15 minutes.DSC_0243.jpg
  8. Let them cool down on a wire rack.

Making crackers is quite easy and like any other food- way better than the mass produced.
It's totally easy to make usual crackers, just add 2 dl of water instead of wild garlic puree.
You can as well use other favorite herbs instead of wild garlic ☺️

Well, I will definitely try this before we leave for Spain so I know how that works. I bet everything is much more expensive there so some extra other options than mass-produced bread, are very welcome!
