Few months before, I celebrated my Golden Jubilee B'day and y'day was my wife's golden jubilee b'day. We are not party freak person, so just love to celebrate 🎉 at home with family and some homemade stuff.
I always love to make different types of vegan cake at home on the occasion of b'day, anniversary or any time whenever my kids demand for a cake. This time I decided to keep the cake simple. As the season of apple is going on, so I used apple in my cake.
Ingredients I used
I prepared it very minimum ingredients like all-purpose flour 1 cup, whole wheat flour 1 cup, vegetable oil about 1/2 cup, sugar powder about 1/2-3/4 cup, vanilla essence 1 TSP, dry fruits, fresh apple 2, baking soda and baking powder, salt a pinch, vinegar 1tsp and water.
Procedure is so simple
In a bowl I mixed liquid ingredients like oil, vanilla essence and vinegar, added powdered sugar in it and mixed well with the help of hand blender.
In another bowl mixed both the flour, salt and baking powder. Passed it through sieve for even powder mixer.(baking soda is not added at this stage.)
I used apple sauce in the cake, so made apple sauce just by boiling apple pieces in water and grind to make thick apple sauce.
This apple sauce added in the liquid mixture and mixed well for a couple of minutes.
Now powder mixture is added in liquid mixture slowly with mixing. Water is added to make a free flow batter. Mixed it well with hand blender to make it fluffy.
Preheated the oven at 180 degree centigrade, and prepared a baking tray by greasing or lining with butter paper.
Baking soda is added to cake batter and mixed slowly with the help of a spoon. Immediately transferred to baking tray. Decorated with apple slices and crushed dry fruits. 👇
Baked it for 30 minutes, cool down to room temperature and the Cake is ready for celebration!!
