India is a country of festivals and Raksha Bandhan is a one of the big festival of India. It is a festival of brother ad sisters. There is no any festival complete without dessert and specially on this festival I prepare Kaju Katli (Cashew nut fudge) every year. There is a say that "practice makes a man perfect". So every time I prepare it I learn something new, and it improves. I can say it was the best I prepared till now.
Today I would like to share how I prepared it and let me know in the comments how it is looking in the photographs!
It is just a 2 ingredients dessert and so easy to prepare.
Ingredients
- Cashew nuts (broken) 500 gms
- Powdered sugar 350gms
- Oil little for greasing
- Water to soak cashew nuts
Procedure
- Soak cashew nuts for an hour.
- Drain water and make paste in grinder.
- In a non-stick pan or heavy bottom pan, heat the paste on low flame with continuous mixing.
- Add powdered sugar at this stage.
- After adding sugar it will become this in consistency, so keep heating on low flame with continuous stirring.
- After about 1/2 an hour it will start to become a lump and that is almost done.
- Cool down a little and kneed it like a dough.
- On a greased surface, make a smooth dough by continuous mashing it.
- Spread in a thin layer before it completely cools down.
- Cut in diamond shape and it is ready!
It can be consumed for 1 month or more if stored in an airtight container.
