India is a tropical country, so we enjoy different fruits in different season round the year. But the king of all fruits is Mango! Yes, mango fruit is the most relishing fruit in India which available about 4 months in the year. There are a lot of varieties of mangoes available but as now it is July end, so all varieties of mango are almost finish and only less than 10% mangoes are remaining. Probably till mid of August, mango season will end.
Yesterday I saw some raw mango in the market and was a bit surprised that still raw mangoes are available, so I decided to buy them and make Mango Jam out of that season's last mango.
As I was thinking, mangoes were not raw and almost half ripen. It was not sour in taste. But I proceeded for Mango Jam recipe.
This recipe contains high sugar
It requires very few ingredients like -
- Mango 1 kg (preferably raw)
- Sugar 1/2 kg
- Cardamom powder 1/2 tsp, Clove buds 5 no. (crushed), and Black Pepper powder 1/4 tsp.
- Salt 1/4 tsp
- Lemon juice 2 tsp
The recipe is so easy that you can just understand by photos only.
Wash and peel mangoes and grate them as shown in photo. As my mangoes were half ripen, so juices came out.
Fresh Mango
Mango Grated
In a heavy bottom pan, sugar is mixed with grated mango and heat slowly with continuous stirring. On a low flame with continuous stirring, it will become a thick mixture within an hour.
As Mango was not sour so, to give it some tangy and spice taste I added lemon juice, clove, and black pepper powder. Also added salt at this stage.
Cool it down to room temperature and filled in a clean and dry glass container. Your Mango Jam is ready to relish with any type of bread. Specially, it is loved by kids a lot!
