Whether it's raining or not, this recipe has become a must-have for me every time. It's a comfort food that I truly savour. I'm sure you all have your go-to comfort foods as well. Oh, but wait I do remember posting a similar one before, I can't exactly remember when but that was probably sometime last year. The twist is, that I used cauliflower as the main ingredient back then. Without delay, let me walk you through my current version!
First,I prepped the ingredients which were broccoli (cut into florets then food processed into bits), chicken meat, chopped onions, chopped garlic and a generous amount of chopped ginger.
Next, I sautéed the onions, garlic and ginger. While it's often said that the order doesn't matter, I like to start with onions since they're cut larger, followed by the garlic and then the ginger.
After that, toss in the chicken, a sprinkle of peppercorns, and a dash of fish sauce to enhance the flavor. Cover with a lid, set the stove to medium heat, and stir occasionally to prevent any burning or sticking.
As I stirred the dish, I noticed one of the pot handles was loose. Annoyed, I decided to switch it to another pot. Since I didn't have a screwdriver, I used a knife to tighten the screw. It dawned on me later that I could have just turned off the stove, fixed the screw, and saved myself the trouble of transferring pots. Well, my brain decided to take its time today. 😅
Once the chicken takes on a brownish hue, add the broccoli and pour in enough water to submerge them, striking the right balance— not too much, not too little. 😁
As I let the dish boil for 15-20 minutes, I decided to throw in some boiled eggs. I had four in total—two for myself and two for my friend/housemate.
And that's just about it. Easy Peasy right? 😊
