Today I wanted to talk about how we've had to make a change in life sans gluten!

Sans Gluten
I never thought I would say it.. but we are going gluten free!
I think one of the really big challenges of living in America and some countries where the food is very damaging is how vigilant we have to be on so many different things. It's really a damn shame!
Gluten is an incredibly common product that is in far more foods than most people realize. The gigantic problem with it is that it is, in the form that is most common in America, very bad for our health. The gluten itself, in a completely unadulterated form is not the issue but all of the dogshit chemicals that get added at the various stages are what causes the real havoc.
We went to a specialist for some things and one of the things that he, and a few others that we've talked to over the past 2 years, had said is that we have to go gluten free because we live in America and gluten is unequivocally a poison. There are a lot of scientific reasons behind it but some of the most important are that it causes undesired permeability in the gut as well as the blood-brain barrier. This causes all kinds of cascading effects, which have made a lot of sense when things line up.
The people we've talked to before have been saying the same thing but when someone says it in the right context and format, that's what makes it stick a lot better. With the issues we've been seeing and pinpointing it to gluten and how much it causes damage to our bodies and brains, it really made sense. It also doesn't mean that we have to do a significant sacrifice of much if we are going to go gluten free, so we figured fuck it, let's give it a try!
Yes there are challenges that are associated with this new-found requirement but with any food challenges, it just requires habit changes and planning. Thankfully we've been eating less gluten over the past year or so than we were before, and even that wasn't THAT much of an issue for us. One of the things that we are going to miss are things like burritos, burgers and some others. It's not so much that we won't make them at home, because we can, but when we are out and have to hit a restaurant it's easy to get a burger or a good burrito and be on our way. Now we have to be cognizant of what we are trying to eat more than we were before so that we reduce or eliminate gluten entirely.
Since we've mostly eliminated gluten from our diets, we've noticed pretty good improvements in our health and wellness. We are less bloated, dropping a few pounds just from inflammation alone from the damn chemicals sprayed on the gluten which we ingest and cause unfortunate chemical reactions in our gut. We've also been sleeping better and have some better focus and concentration. The latter is a little harder to pinpoint but one of the things that is noticeable is that we are less fatigued from having a carb crash type event so that's an important improvement.
The thing that I will note is that this is largely an American problem, and the places that eat similar to it which sucks. When we were in Italy, these issues weren't present because they don't spray all of the nasty shit on those plants that we do here which sucks. We ate all the pizza and pasta that we wanted when we were in Italy and we LOST weight instead of gained it. So we know this issue with gluten is mainly because of the bullshit that is added to our foods, these nasty industrial chemical byproducts that are forced into the food system.
One step forward in terms of our health, that's for sure!
