Everything cooked with charcoal is welcome to my table, I think the flavor it brings is totally different from any spice or way of cooking, that smoky essence makes me feel close to nature and a country atmosphere. In a past post, I shared the way we grill at home, but now skewers are the protagonists, so below you will see one of the many variants that we usually do as a family.
As everyone knows, skewers require thin wooden elements which are perfect for piercing meats and vegetables. This time we used beef (sirloin steak), chicken breast, spicy chorizo, onion and paprika. Each element was cut into small pieces of similar sizes so that the skewers were uniform.
After we had the pieces cut, we proceeded to assemble the skewers, the order was:
- Paprika
- Chorizo
- Onion
- Chicken
- Meat
Then we repeat the same elements a couple more times until we have a complete skewer.
By the way, the chicken and meat were seasoned with salt, black pepper and garlic powder.
We used a garlic, vinegar and butter based dressing to flavor the skewers, we used a branch of cilantro to apply it. Believe me, this dressing really intensified the flavor of the skewers.
That's how the skewers look on the grill, don't they look beautiful?, I love those colors.
And this is what they look like once they are ready. We made sure that everything was well cooked, but without burning any of the ingredients. I particularly like the chorizo to be crispy and the vegetables to be well cooked.
The garnish we used this time was parboiled yucca, we were lucky that it was quite soft and that made it cook quickly. We cut it into pieces, added them to the borchetas and placed them on the grill for a few minutes, which smoked them and changed the flavor in a positive way.
There is an element that cannot be missing at the table when eating skewers or grills. Guasacaca is a sauce that can be made with different ingredients and this one in particular we made it with green tomatoes, avocado, onion, garlic, cilantro, salt and pepper to taste. You can't imagine how good this sauce is with the parboiled yucca, it definitely elevates the level and adds a lot of flavor.
The amount of skewers we made was enough for 7 people, each one was served three skewers of chicken, beef and chorizo plus one of parboiled yucca, that was more than enough to be quite satisfied. This particular dish is one of my favorites, every time we make it we perfect it more and more, so I'm anxious to repeat it soon, although it may vary a little.
