It's the peach season and I want to test as many peach cakes as possible. So far I've tested two and have shared the recipe with you as well. If you've missed the posts, you can check them here:
Wait, one was an apple cake. Right, now I remember. I made it because the apples were hard. Looks like since I had covid, I'm forgetting things.
Anyway, today I am going to show you a new recipe I wanted to try out because it looked easy to make and also needed to try out a new one.
The original recipe is this one -> Simple And Fast Cake | Delicious Peach Cake. However, I modified the original recipe a little.
Ingredients
- 100g sugar,
- 2 eggs,
- 1 vanilla sugar,
- 125g flour,
- 45g sunflower oil,
- 65g yogurt,
- 1 tsp baking powder,
- 100 g walnuts
- 3 peaches.
The walnuts are the extra I added to the recipe as I like the taste of it and always makes the cake more tasty. Another deviation from the recipe was the yogurt. Unfortunately the recipe does not day what kind of yogurt you need and we know there are various types, from fat to light and so on. So I had light yogurt but judging from the video, how creamy that yogurt was, I thought I need something else. So I used half sour cream (20% fat) and half yogurt (3.5%fat) and have made a mix. And I added 3 peaches, instead of two.
Method
Place the sugar and the eggs in a mixing bowl, add the vanilla sugar and mix for 5 minutes, till it becomes white and foamy. Add the sunflower oil, the yogurt and mix well.
Add the baking powder to the flour, mix well, then sift it into the mixing bowl and mix for a couple of minutes.
And this is where I deviated from the recipe. The recipe says 2 peaches, diced and rolled into flour to avoid sinking to the bottom. I don't like that and never do that with any fruit.
Besides, I wanted to make an upside down cake and decided to spread the sliced peaches on the bottom of the cake pan, after placing baking paper on the bottom, that I brushed with butter.
Then I sprinkled the walnuts on top of the peaches.
Then I spread the flour mix on the fruits and baked for 45 minutes, at 180°C.
And this is what I got. A nice, golden brown cake, which meant to be an upside down cake, but at that point I had to realize I can't turn it upside down, but I wasn't disappointed as it looked good and look at the crust.

The best thing about this cake is that it only has 100g sugar and 125g flour. The 100g walnuts also counts as walnuts are of high nutritional value, but also contain a lot of important nutrients that the body needs, like protein, fat and carbohydrates.
You can make this cake basically with any fruit you like and I'm going to keep the recipe.
