Chicken And Green Peas Stew With Fusilli

Today I'm going to post something different from what you're used to. Today was cooking day, so you're going to see a strange recipe I have just invented. You know me, fake it till you make it is my motto in the kitchen, a very good one if you ask me, as this is how you get new dishes, tailored to your taste.

The truth is, earlier this week I was browsing the most famous video sharing platform and the algo offered me a lot of nice recipes. I saw one that suited my taste and today I thought why not make it for lunch. So I got the ingredients I remembered from the recipe, but I said it would be wise to check the recipe again, just to be on the safe side. When I did, saw that what I remembered to be chicken breast, was in fact mushroom and the other ingredients I had in mind did not match either. No problem I said, I can still put together the dish I had in mind. Once you like the ingredients, it's easy to create a good dish. So let's see what I cooked today.

Ingredients:

  • 300g fusilli (pasta),
  • one chicken breast (500g),
  • 1 red paprika, or bell pepper,
  • 1 onion,
  • 260g green peas (I used canned green peas),
  • 1 tsp salt,
  • 1 tsp red paprika powder,
  • 1 tsp Knorr dried veggie/salt mix,
  • black pepper,
  • sour cream,
  • olive oil.

Next I did something I've always wanted to do and never did. We have a lot of Venezuelan ladies in the foodie community and have always seen them using the blender to make a sauce out of the veggies. It's a good idea, better than chopping them and saute as I used to do. After the sauce was done, I put it aside to prepare the chicken breast.

I cut the chicken breast into small pieces, added olive oil to the pot, then added the chicken, salt, Knorr veggies, pepper and cooked it till it became white.

Then I added the red paprika powder, the veggie mix, water to cover and cooked covered with a lid, till the meat was tender. I used chicken breast, which does not need a long cooking time, so in 20 minutes it was done.

Then added the peas. The reason I added the peas last, when the meat was already done was that canned peas are already cooked. If you have fresh or frozen green peas, add them when you add the meat.

In the meantime, cook the pasta according to the instructions. I used fusilli, but you can use any pasta you want, or rice, or even mashed potatoes.

When everything was tender, I turned off the heat, took out a part of the sauce, added sour cream, mixed it well and added it to the stew. You can leave this step out, adding sour cream to it is not a must, but I love the sauce.

The good thing about this recipe is that you can add to the main ingredients a great variety of other veggies and vary them as you please. I was thinking mushroom for example or tomatoes, when it's the season. What I forgot to add is garlic. It's not a must, but it gives the food a nice flavor. Other spices is a different thing. If you like more spices, you can opt for your favorite. At first I was thinking to add a few bay leaves, but had no idea how it would go with the green peas, so I didn't. In any case, it is tasty as it is, so i don't regret my choices.

adding sour cream to it is not a must

but is a good balance to the spicy ingredients I'm sure. Looks yummy 👍

Ufff here in Argentina it's only 11 in the morning but I swear that when I saw the main picture I got hungry hahaha and not to mention when I started to see the process, my weakness is pasta and this food looks excellent.
