It's a rather cold weather this morning here, how's ur side? Hope we're all doing great? I wish us splendid day ahead.
If you've read my last post about my garden U would know i Shud be harvesting some maize already 😅, and truly I've harvested and dried some for storage, consume corn in different ways and recipes. I'll gladly share with you one of my recipes, though it's traditional recipe (can be made differently in other places).
Ingredients needed
Maize (preferably fresh)
Palm oil
Crayfish
Red chili
Onions
Scotch bonnet
Seasonings
steps to follow
Step 1. Prepare the maize like this
The wash and set aside.
Step 2. Pour in a blender, Wash the peppers and onions to preference, and add the crayfish then blend to a smooth paste (don't av the picture of the blending process...my bad)
Step 3. Pour the blended paste into a bowl, in a smaller stainless bowl add the palm oil and simmer for 1 minutes on low heat then pour and stir in.
Step 4. Dice some onions (can skip this step) and saute in some oil and pour info the batter
Step 5. Add the remaining ingredients to taste (salt, ginger powder, crayfish powder and all) into hot water before pouring into the batter then give it a good mix and start moulding (can be in foil, leaves, polythene, or tins)
Prepare a pot and pour some water (if using polythene like mine) and put into the water not too much (for space) and simmer for at least 30 minutes on medium heat
Before you know it our corn pudding (ABARI as we'd call it locally) is ready for consumption
This delicacy can be eaten anytime of the day (breakfast, lunch or dinner).
