Una Bruja en la Cocina: "Banana Empanadas with Mozzarella and Ham" [EN] // [ES]

I love empanadas and pastries, they bring back fond memories of my childhood, and the flavors that can be found inside an empanada can be so varied and delicious that my imagination flies just thinking about it, today I wanted to prepare some delicious ripe banana empanadas with mozzarella cheese and ham, something that had been going around in my head for a while and that I did not prepare because to tell the truth, although we use very hot oil, the amount of oil absorbed by this type of empanadas is very large and preparing them in the oven makes me lazy because it takes a long time to be as I like, taking advantage of the benefits of the air fryer I was encouraged to prepare them again and share them with you.



These plantain empanadas represent a meal that reminds me of my beloved grandmother Pancha, she used to prepare them and my father was delighted, they are really easy to prepare, like any other empanada with the difference that, instead of corn flour or wheat flour, the main ingredient is plantain. The filling can vary according to each person's taste, personally I love the cheese and meat ones, the contrast of flavors between the sweetness of the plantain and the salty of the filling is really delicious. I must say that it is necessary to use plantains that are not too ripe so that the dough has a consistency that allows us to handle it more easily and that when cooking them they do not deform or fall apart.



A very simple and cheap recipe that you can easily cook in the oven or in a cauldron with enough hot oil, and you will still get a real treat. Join me and I'll show you how to prepare them.

Ingredientes

3 Large ripe bananas
300 gr Mozzarella cheese cut into cubes
200 gr Cooked leg ham
4 Tbsp Wheat flour
1 tsp Salt
2 Tbsp Corn oil




Preparation

Preparation time 10 Minutes
Cooking Time 20 Minutes






We will begin by boiling the plantains cut in pieces of the same size, this will take us about 15 minutes, still hot and carefully remove the skin and mash them to make a puree, we can use a potato masher or a fork, when we have the puree we add salt.











We continue adding the wheat flour and knead until we obtain a dough that does not stick to the fingers, with the dough at the right point we form balls that fit in the palm of the hand.











With the help of a piece of plastic wrap (I use bread or wheat flour bags that are resistant) place the dough and press it with a plate or your fingers until it forms a tortilla, add the cheese cut into cubes and the ham cut to taste, close and shape it into an empanada. We take to the air fryer preheated to 180 °C for 15 minutes, to the oven preheated to 200 °C for 25 to 30 minutes and in hot oil for about 5 minutes over medium heat, this is the time needed to brown our empanada and melt the cheese.











Delicious for breakfast or dinner, accompanied by a glass of fruit juice these rich and simple empanadas are really good at any time, we can also form small balls with cheese in the center, instead of empanadas, and even this base dough with a couple more tablespoons of wheat flour can be used to make banana tequeños that are a real delight. I want to try adding corn flour instead of wheat flour, which I am sure should give us a much firmer texture. What would you fill these ripe plantain empanadas with?

Yo amo las empanadas y pastelitos, me traen recuerdos gratos de mi infancia, y es que los sabores que podemos encontrar dentro de una empanada pueden ser tan variados y deliciosos que mi imaginación vuela de tan solo pensarlo, hoy quise preparar unas deliciosas empanadas de plátano maduro con queso mozarela y jamón, algo que llevaba rato dando vueltas en mi cabeza y que no preparaba porque a decir verdad aunque utilicemos el aceite muy caliente, la cantidad de aceite que absorbe este tipo de empanadas es muy grande y prepararlas en el horno me da pereza pues es mucho el rato que llevan para estar como me gustan, aprovechando las bondades de la freidora de aire me anime a prepararlas de nuevo y a compartirlas con ustedes.



Estas empanadas de plátano representan una comida que me hace recordar a mi amada abuela Pancha, ella solía prepararlas y mi padre quedaba encantado, son a decir verdad muy fácil de preparar, como cualquier otra empanada con la diferencia de que, en lugar de harina de maíz o harina de trigo, su ingrediente principal es el plátano. El relleno puede variar de acuerdo a los gustos de cada quien, en lo personal me encantan las de queso y las de carne el contraste de sabores entre lo dulce del plátano y lo salado del relleno es realmente delicioso. Debo decir que hay que usar plátanos que no estén tan maduros para que la masa tenga una consistencia que nos permita manejarla de manera más fácil y que al cocinarlas no se deformen o deshagan.



Una receta bastante sencilla y a decir verdad económica, que pueden cocinar fácilmente en el horno o en un caldero con suficiente aceite caliente, y de igual manera obtendrán una verdadera delicia. Acompáñame y te muestro como las prepare.

Ingredientes

3 Plátanos maduros grandes
300 gr Queso mozarela cortado en cubitos
200 gr Jamón cocido de pierna
4 Cdas Harina de trigo
1 Cdta Sal
2 Cdas Aceite de maíz




Preparación

Tiempo de preparación 10 Minutos
Tiempo de Cocción 20 Minutos






Comenzaremos sancochando los plátanos cortados en trozos del mismo tamaño, esto nos tomará unos 15 minutos, aun calientes y con mucho cuidado les retiramos la piel y trituramos hasta hacer un puré, podemos usar un pisa papas o un tenedor, cuando tengamos el puré le adicionamos la sal.











Continuamos agregando la harina de trigo y amasamos hasta obtener una masa que no se pegue de los dedos, con la masa en el punto adecuado formamos bolas que nos quepan en la palma de la mano.











Con ayuda de un pedazo de plástico (yo utilizo las bolsas de pan o de harina de trigo que son resistentes) colocamos la masa y hacemos presión con un plato o con los dedos hasta formar una tortilla, agregamos el queso cortado en cubos y el jamón cortado a gusto, cerramos y le damos forma de empanada. Llevamos a la freidora de aire precalentada a 180 °C por 15 minutos, al horno precalentado a 200 °C por 25 a 30 minutos y en aceite caliente por unos 5 minutos a fuego medio, esto es el tiempo necesario para que se dore nuestra empanada y se derrita el queso.











Deliciosas para un desayuno o una cena, acompañado de un vaso de jugo de frutas estas ricas y sencillas empanadas son realmente buenas a cualquier hora, también podemos formar bolitas con el centro de queso, en lugar de empanadas, e incluso esta masa base con un par de cucharadas más de harina de trigo nos puede servir para armar tequeños de plátano que son una verdadera delicia. Quiero probar agregándole harina de maíz en lugar de harina de trigo que estoy segura de que debe darnos una textura mucho más firme. ¿Con qué rellenarías tú estas empanadas de plátano maduro?

Wow se ven muy delicioso estás empanadas de bananas,

Banana is one of my favorite items, but I was surprised to see that it can be used to make flavored recipe. Thanks for sharing the recipe.

In fact I have seen some recipes like this one where they add a little flavor to the banana dough, seasoning it with paprika or sweet spices, personally I prefer it without that.
