Hello, friends and food lovers! Today, I am sharing a special recipe with you. It is not Indian nor from Norway. I learned it a long time ago and How I came through this recipe A long time ago, there was an international shop run by a Palestinian man. He sold various sweets from the Middle East. One day, I saw some vermicelli blocks wrapped in film and decorated with nuts. I asked him about them, but we couldn't communicate because he didn't speak English and I didn't speak Arabic. I looked at the sweet carefully and went home. YouTube, was new at that time. I carry Indian vermicelli from India each year to make Indian sweets.
Instead of making normal Indian sweets, I tried to make muffins from them with sugar and nuts. The taste was okay, but all the noodles stuck to the muffin molds and we had to scrape the pan, ruining it. After many attempts, I finally found the recipe for Kunafa. I don't like the cheese taste, so I changed the ingredients according to my taste and came up with these nests. However, now there are many recipes on YouTube that you can easily find.
I make these nests quite often when I have guests over or when we have visitors. It is easy, simple, with ingredients, and delicious.
Ingredients:
1/2 cup sugar
40 almonds
20 Makhana/puffed lotus seeds.
1 tbsp. peanuts roasted
2 tbsp. pistachio
1 tbsp. dried coconut
1 tsp chocolate sprinkles
1 tsp powdered sugar
2-3 pinches of cocoa to coat peanuts
150 grams of fine vermicelli
50 grams butter
Mix vermicelli and butter and keep aside for 15 minutes.
Mix water and sugar and add a slice of lemon.
Cook to a sticky syrup.
Prepare muffin pan using silicon molds.
Form buttery vermicelli into the mold and shape it like a bird's nest.
Here are the ingredients again.
Bring the muffin tray to a preheated oven at around 180 C and bake it 10 minutes.
after 10 minutes baked remove the baking tray from oven and pour 1/2 tsp syrup on each nest to stick them properly.
Sprinkle some dried shredded coconut on the nests. And 2 peeled or more almonds. bake it for another 10 minutes. remove the muffin tray from the oven.
Now add makhana,
and some peanuts coated with cocoa in a few nests.
Some more drops of sugar syrup.
Sprinkle chopped pistachio and some decorative chocolate sprinkles.
Carefully remove them from the mold after they cool down.

In Norway, they look like this with snow. (sprinkled powdered sugar.)
They are delicious. Each time I develop this recipe, it gets better and better.
