Last night, I prepared a delicious vegetable roti for dinner, and I can't wait to share this recipe with you all! Vegetable roti is a fantastic addition to the table, combining both flavor and nutrition. Filled with a mix of vibrant vegetables, I also added potatoes and a hint of cooked fish to enhance the flavor and make it even more filling. This results in a soft, tasty roti that’s perfect for everyone—from kids to adults! These rotis are incredibly flavorful. They make a nutritious start to the day for breakfast, a satisfying dinner option, or even a delightful tea-time snack to enjoy with friends and family.

Method of making....
🍀 2 1/2 Cup of Wheat flour.
🍀 Some boiled and mashed fish.
🍀 Some boiled and mashed potatoes.
🍀 Coconut oil for frying.
🍀 1 Teaspoon chili powder.
🍀 1/2 Teaspoon of curry powder.
🍀 1/2 teaspoon of pepper powder..
🍀 Salt as required.
🍀 Some finely chopped leeks.
🍀 Some finely chopped carrots.
🍀 A green chilli pod finely chopped.
🍀 A little chopped onion.
🍀 A few finely chopped curry leaves.
🍀 A little chopped garlic.
Method of making....
First, add the wheat flour to a mixing bowl. Then, add a pinch of salt, 2 tablespoons of coconut oil, and gradually pour in water, mixing well to create a smooth dough.
Next, prepare the filling for the roti. First, place a pan on the stove and add 2 tablespoons of coconut oil. Once the oil is heated, add chopped onions, carrots, green chilies, salt, and the crumbled cooked fish. Mix everything well, allowing the ingredients to blend and cook together.
Next, add chili powder, pepper powder, salt, and the mashed potatoes to the mixture. Stir everything together thoroughly and let it cook for about a minute. Once it’s well-mixed and heated through, remove the filling from the pan and set it aside.
Next, divide the prepared dough into several small portions. Roll each portion into a thin, round flatbread. Then, place a tablespoon of the prepared filling onto each flatbread. Shape and fold them as shown in the images below, ensuring the filling is well-sealed inside.
Next, place a pan on the stove and add a small amount of oil, allowing it to heat up. Once the oil is hot, place the vegetable roti on the pan, cooking each side until golden and crisp. When all sides are cooked, remove the roti from the pan and set it aside.
