Let's Eat Lunch!
My eldest son has been coughing with thick phlegm since last Wednesday. And he had also been eating really clean food, mainly clear Chinese soup with rice. He is a bit 'sick' of soup by today, so let's cook something else.
Doctor advised not to eat anything spicy, oily and fried. Mother-in-law reminded no chicken. Fish for today!
Steamed Tilapia Fillet and Stir Fry Lettuce!

My last batch of fish in the freezer and I got to restock. Let's cook something simple today. Chinese steamed fish. I ran out of most ingredients, no spring onion, so I made do with only ginger and garlic.
This was how the fillet looked like, actually two large fillet, I cut them into smaller fillet.
Then I marinated them with salt and pepper.
While at it, I prepared the seasoning sauce by sautéeing the julienned ginger and diced garlic till aromatic.
Followed by adding 2 tablespoon soy sauce and 1 tablespoon oyster sauce. Since the son was coughing, I omitted Shaoxing wine and sesame oil.
Put the fish to steam for 10 minutes, then done! Overcooked fish wouldn't be so tasty, hard.
After steaming, I scooped out the fish into serving plate.
Then, poured the soy sauce seasoning on top. Such simple method of cooking but yielded very flavorful basic Chinese steamed fish.

Very easy cooking and I really enjoy cooking in steaming way. Clean kitchen too, minimal cleaning.
I pray that my eldest son will be healed soon. He had been skipping school for 4 days now. However, doctor did advice to rest a lot because any strenuous exercise will exert the lungs to breathe more, then he will cough more. Glad family enjoy such simple meal which we ate the steamed tilapia with lettuce and rice.
