Crispy vegetable cutlet

Happy start of the week foodies ☺️

Cooking is one of my favourite thing. So this time I was encouraged to make one of the snacks that I like the most, a crispy vegetable cutlet, accompanied by ketchup.

Ingredients:
• oil
• ginger
• green chilli
• onion
• carrot
• salt
• red chilli powder
• coriander powder
• lemon
• green coriander leaves
• potato

Elaboration process:

First of all boil 5 potato and then mash it well.

Then take a pan and then put some oil

After heating up put ginger and green chilli both, it should be finely chopped fry till 20-25 sec, add 2 finely chopped onion and some peas (optional) stir-fry onion and peas, upto 2 mins add some betroot 1/4 as it gives good colour and flavour to the cutlet. I haven't added as I was not having it in my fridge. Then add 1 finely chopped carrot. U can also add some beans in it. Add salt, red chilli powder, coriander powder, lemon juice, and green coriander leaves. Stir for 3-4 mins, roast all the veggies.

We don't have to keep it soft we have to keep it crunchy. When it get dry then add mashed potatoes. Stir and cook for 2-3 mins.

Now it is prepared. Taste to check the seasoning, if it feels that salt is less than add more according to your taste. Turn off the flame and cool it completely.

As the mixture is cooling let's make the cutlet crispy by taking a bowl and add 1/2 cup refined flour add salt and water to make a smooth batter. Mix it well so that it doesn't have any lumps. The batter should be thin otherwise it will feel like chewy.

Take a big bowl and put some roasted bread crumbs.

Now shape the mashed potato in any shape of your choice.

After shaping the cutlets dip it into the batter and let the excess batter drip and then put it in the bowl of bread crumbs, shake and coat it well.

After doing all the cutlet take a pan, put the oil. Heat the oil on high flame. Now add cutlets one by one. Fry it on medium flame untill golden brown. Keep moving to fry even. As it gets deep brown than take out and it is ready to eat.

Next time when you make it, add a little cornflour and rice flour ,it makes it very crispy and more crunchy.
We too had made this same during the time of covid lockdown.🙂
