Mixed Rice and Beans with Chicken Tomato Stew

Hello guys, I'm happy to share with you my first post on the foodies community. Today I'm going to show you all how I prepared mixed rice and beans with chicken stew.

Ingredients for the Rice and Beans Mixture
Rice
Beans
Salt
Water

Preparation:

The beans were cooked separately first since it takes the longest time to cook. Making the white beans was simply a matter of boiling it and adding a little salt. After came the white rice, the type I used didn't need to be pre-boiling, remember to add salt depending on the quantity you are making. During the boiling process when you notice that the rice will soon be done you add the beans and mix them together. Please I can not stress it enough to be careful of the quantity of salt! Generally, when measuring salt my motto is "better less than more", and ALWAYS taste if you aren't sure.

Ingredients for the Chicken Tomato Stew:
Oil
Chicken
Vegetable
Tomato paste
Blended Tomato
Salt
Curry powder
Onions
Garlic
Ginger
Maggi Cubes
Chilly/Pepper
Mixed spice seasoning powder
Soy sauce
Water

Chicken Preparation:

After cutting and setting the chicken, put them in a pot, then add the maggi cubes (you can substitute with royco or knorr cubes), two is usually enough. Add chopped onions, as well as a tea spoon of mixed spice seasoning powder (I used Dye-Gema powder, but it's not a must to use mixed spice powder) and lastly a spoon of salt.

When you start to boil don't add any water yet, let the chicken juices and spices just simmer first for a good blend, then after 5 or so minutes you can add water and let the chicken fully cook. We will use the chicken stock juice for our stew.

Information About Tomato Paste:

Tomato blend just means tomato that was blended in a blender and boiled until the watery part evaporated and left a naturally thick paste, you can blend a lot and store in the freezer to be scoped up and used whenever. Though it takes awhile for the water to evaporate, sometimes hours depending on the quantity of tomatoes you used. The store-bought tomato paste is simply meant to add more thickness to the stew, I used two satchets.

Preperations for the Chicken Stew:

Start by placing the garlic and ginger in a molter and pound them until well crushed, then dice the vegetables. Heating oil in a pot, then add chopped onions and wait till they are slightly brown before adding your tomato blend and tomato paste. While on medium heat add the vegetables, 2 cubes of maggi, the crushed garlic and ginger, and chili/pepper (mine was powdered so I didn't need to crush them). I also added a bit of soy sauce for creativity.

Mix and add the chicken with the stock and a cup of water at least, then leave to boil for at least ten minutes then simmer.

So that's it, I think it turned out pretty good actually, and I was told by family that they loved the stew especially.
