Preserving Mangoes

Its been a while posting about food in this community. Today, I want to share about a fruit here in the Phillipines that has been known expensive. But due to hot weather and almost no rain at all, the seasonal fruits specially mangies voluntary beared fruits. However, due to over supply, some farmers did not harvest their mangoes. Just like in our backyard, mangoes are just falling from trees since we can't consume it. We even offer it to our neighbors, but they have their own mango tree also.

One day, as I am browsing you tube channel, I watch a mother who show tips how to preserve mangoes. So, I tried to make pickled mango using my recipe of sweet and spicy vinegar.

I took all the mangoes that fallen in our backyard and choose the the crunchy one and peeled it. After peeling, I sliced it in julien cut then washed with cold water. Then I prepared the sweet and spicy vinegar.First I add two table spoon salt, then 1 cup vinegar, 2 cups brown sugar, pamienta, onion, chili and mixed until the sugar and salt has been dissolved. Then put it in a sealed jar. Jar to use must be glass not plastic ware.

Then chill it for longer life andaintaim the sweetness of the mango.
The pickled mango sauce is good for fried fish, grilled meat or for dried fish also. .

I had made two jars on Saturday but it was eaten by my kids yesterday.

yes its good to partner with fried fish or meat,the sauce is sweet and sour
