Have you ever craved for a meal so bad that you can't even rest until you have had a taste of that meal? Oh well, this is me right now. I was tired of the usual tomatoes stew and wanted to try something different which was healthy too. I didn't know exactly what I wanted to prepare but I knew I wanted something from the usual for lunch. However the thought of making banga stew came to my mind. So i quickly embraced it and dashed off to the market to buy some ingredients for it.
Banga stew is something that I don't prepare very often. In fact its been years I made it. Reasons unknown though. Maybe because of the stress involved in making it. Believe me its quite stressful but if you succeed, you are the real MVP.
Meanwhile banga stew is called Ofe Akwu in my place of origin or you can call it palm fruit stew. However, since this is a community of different cultures I will stick to Banga stew which is more popular.
So I came back from the market and started the process of making it into a sweet stew. The ingredients of making this stew aren't too much. Very affordable and available too.
INGREDIENTS
Banga nuts ( palm nuts)
Meat
Okpei ( fermented oil seed).
Crayfish
Seasoning cubes
Salt
Pepper.
Scent leaves : scent leaves gives the Banga Stew a unique taste or aroma.
Banga spice ( optional). I didn't use this because I already have ogiri okpei. So if you can't find the ogiri okpei, you can use the banga spice.
Cooking Directions
First of all,you have to wash and boil the palm fruits till soft. Pound the palm nuts to get the juice. To get the juice, you have to add some water to the fruits and squeeze out the juice.
Set the pot of palm fruit extract on fire and cook on a high heat. Leave it to boil until you notice some red oil at the surface of the Banga Stew. Check if it's watery and allow to cook until it has thickened to the consistency of your choice.
Now, add the protein of your choice, , the onions, crayfish and pepper and allow to boil very well.
Add the scent leaves and salt to taste. Leave it to simmer for about 2 minutes.. The Banga Stew is done and ready to eat.
You can serve with any food of your choice such as white rice,boiled yam, boiled plantain or boiled beans. I served mine with white rice decorated with carrots. I think its quite popular to eat the banga stew with white rice I haven't tried the yam,plantain or even beans serving. I hope to try it out one day.
