Do you remember when I was writing about how much and why I love lemons?
Well, some of you asked me about that Lemony Spaghetti recipe.. and now I am here to make it happen!
Disclaimer: This was a last-minute effort, so I (found out later that) I was missing a basic ingredient, and .. the light was not so good for the photos.
I will tell you about all the steps I followed and also what I will do different next time.
But before that.. Why Lemon Pasta and who will enjoy it?
It is a simple yet flavorful dish, delicious in its simplicity and authenticity of taste. The quality of the ingredients plays the most important role. If you are a past lover, you need to try this at least once. If you prefer sauces and full tastes, maybe you will not enjoy it as much (but you still need to try it)
What will you need - Ingredients:
Organic, fresh lemon (1 or 2)
Parmigiano
Butter (or olive oil)
Garlic
Pepper
Parsley
You will need a casserole for the spaghetti and a frying pan for the sauce.
Do the normal procedure for cooking the spaghetti. In salted water that boils, cook the spaghetti until half cooked.
I used pasta size 6, which needed 11 minutes of cooking so I cooked them in the casserole for 6 minutes.
During that time, put the butter (1–2 table spoons) in the frying pan and start steering.
When the butter melts, put the lemon juice in the pan and stir together until it blends beautifully.
Attention! I should have included garlic at this point, but I forgot. I think that this would make a huge difference in taste. So if you try this recipe, you can put garlic before the lemon juice.
When the spaghetti is half cooked, you can take them off and cook them in the frying pan.
Tip! I left half of it to be cooked normally because I did not know if I would like the end-result and if the rest of the family would eat my new recipe!
Make sure to put some from the spaghetti water in the frying pan for the spaghetti to be cooked. 1–2 minutes before the end of the cooking time, grate parmesan in the frying pan and stir until they blend together.
That was it!
See how easy this recipe is?
At the end, take off the spaghetti and grate parmesan & fresh pepper on your plate. Put also some lemon zest on top and some extra lemon juice (why not)
Of course I was the only person who ate this dish - so I highly recommend it! haha
There are some variations that I have found, with chicken, shrimps etc.. but let's leave it for another effort :)
What I will do differently next time.
- I will replace butter with olive oil
- I will add garlic
- I will put a bit more lemon
- I will add Parmesan flakes instead of grated pieces of it
- I will make more and better photos
What are your thoughts? I found this to be a very special, sophisticated, and light meal and will try it again!
Thank you for visiting and for sharing this opinion.
If you do try it, or if you know this dish already, please let me know!
