Its Aloo palak and parathas for dinner tonight. I defrosted the boiled and pureed spinach earlier in the afternoon.
Heat Oil in kadai. I have used coconut oil. Add cumin seeds, add 1 medium diced onion, 2 green chilies. When it turns golden brown, add 1/4 teaspoon turmeric, 1/4 tea spoon red chili powder, 1/4 teaspoon cumin powder, 1/2 teaspoon coriander powder. Mix well. Add 1 medium sized diced tomatoes. Add 1/4 cup water to deglaze the kadai and cook until the tomatoes turn soft. Once the tomatoes become soft, add the pureed spinach. Add water to the consistency you need. Add salt and boiled potatoes. Cook for 5 - 10 minutes.
