Methi Tomato is one of the easiest things I know to make and probably one of the very first few dishes I learned to cook a very long time ago.
Ingredients:
Fenugreek Leaves - 1/2 cup
Green chili - 2
Minced Ginger - 1 teaspoon
Diced tomatoes - 2
Tamarind pulp - 2 tablespoon
Turmeric - 1/4 teaspoon
Red chili powder - 1 teaspoon
salt - as much or as little as you like
Heat oil in a cooker (As always, I use coconut oil and a cooker). Add mustard seeds and when it splutters, add ginger and green chili. Stir it around for a couple of seconds and then add the fenugreek leaves. Let it cook for a 4 - 5 minutes and then add the turmeric powder, red chili powder and salt. mix it well. Add 1/4 cup of water and pressure cook for 2 whistles. Once the pressure is released from the cooker, add 2 tablespoon of tamarind pulp and cook it for 5 minutes.
That's it. Serve with Roti or rice. I personally like to eat this with regular white bread.
