Bueno Cheesecake

Today while me Aimee and Kaleb were in the shop I got the idea of picking up a cheesecake, but the only ones they had available were small pots.

I wanted to get a full one so we could share it with Aimee's parents and rather than just buying a bunch of those pots, I thought it would be better to make one.


I put 300g of digestive biscuits in a small bag and smacked it around a little.

After they were nicely beaten, I put them in a bowl and 150g of melted butter was poured into the bowl and it was mixed around nicely.


After that was done I poured the mix into a cake tin and patted it down.

At first, Aimee used a spoon to do so, but it was a bit awkward, so I got a potato masher out which helped to get it nice and even, while also condensing it.

The base is going to be fairly thick, which I always like with cheesecake.


We decided to make a Bueno Cheesecake, so we used some of these smaller bars to melt down for the mix itself.

They melted fairly quickly on a low heat. We used two packs of these bars, so this cheesecake is going to have a fair few calories in it.


500g of Philadelphia, 1 teaspoon of vanilla extract, 100g of icing sugar and 300g of double cream go into the bowl for a mix first.

When that is nicely mixed the chocolate is added into this concoction, and that is mixed up until it is a nice mouse consistency which forms stiff peaks.

After the base had some time to chill in the fridge, it was taken out to have this mix added on top of it.


Here is the final result with some decoration added to it.

I decided to put some squares of Bueno bars on top, mainly for aesthetics, but it looked a bit bare, so I crumbled a few squares over the top too.

The mix tasted great and I can't wait to try it. After being left in the fridge for about an hour, or two it still hadn't set properly. Since I didn't want to ruin it taking it before it was ready, I left it in the fridge.

It is there now, taunting me, but by tomorrow it'll be ready to try properly.
