Lechon Manok or roasted/grilled chicken is one of the Filipino popular food. grilling machines can be found everywhere in the streets of the Philippines, Traditionally it was served with Lechon sauce and some papaya atchara for the sides, It is best to eat with newly cooked white rice.

Here in Dubai, you can find also lots of stalls selling grilled chicken but the taste was way too much different, maybe I can make a blog about grilled chicken here in the UAE next time.
What if you are craving for something like our own lechon manok? what if you were somewhere where you cannot find one. So maybe I can help you with that, I hope my simple recipe can help you to end up your craving. Others may say it is more convenient to buy cooked Lechon Manok, but if you have time and you want to learn on how to prepare and cooked it by yourself here is the blog for you.

Lechon Manok Recipe

Before we start, let me tell you that you will need the proper equipment an oven or a roaster or if you using a Charcoal griller.

This recipe I will share with you is very simple. A spare of your time is needed to marinate the chicken. The longer the time you marinate it the better the taste and the tender the chicken is.

INGREDIENTS

1 whole chicken

Basting Sauce/Marinade

  • dried bay leaves crumbled
  • soy sauce
  • Sprite soda
  • oyster sauce

(mix on separate bowl)

  • ginger powder
  • garlic powder
  • coarse sea salt
  • ground black pepper

Stuffing

  • 1 stalk crushed lemongrass tanglad
  • red onion sliced
  • slices of lemon

brush the liquid mixture all over the chicken, and with your hands get the powder mixture we made before and rub it equally in and out of the chicken to incorporate the flavors, do it every 5 minutes so for us to be assured that the mixtures have been well absorbed by the chicken. Continue to do it at least three times. Then marinate it overnight in the same mixture. this time I don't have the time to marinate it overnight so I decided to stuff it after marinating for an hour. I stuffed the chicken with Onion, Lemongrass, and slices of lemon. Put it on a metal skewer and put it inside the oven. Take note before putting the chicken inside, pre-heat the oven

Instructions in roasting/grilling

Heat up your grill (around 160C).
Skewer and tie the chicken in a metal skewers. put the chicken in the middle of the grill. The heat should be coming from the sides. This will take some time to cook the chicken, but it prevents the skin from burning. But depends also from the kind of burner you have, just make sure that you will put your chicken at the center so that it will be cooked equally.
close the Oven and grill the chicken for 1 Hour.

Check the chicken every now and then, and brush it with the remaining basting sauce so that it will not go dry.

Transfer to a serving plate.

for the gravy sauce:
in a pan put and melt a slice of butter then put some cornstarch, stir it until it turns brown, then pour some beef stock, stir it until you reach the right consistency you want, season it with salt and pepper.
