In my family, there has always been the tradition of making just one dish, both for lunch and dinner;
because we all work, time is what it is, and life is always on the run...
but we have never lost the habit of conviviality at the table, it's the only moment of the day when we can come together to share our daily experiences.
Risotto with zucchini and shrimp
And today, for lunch, I chose a simple, good risotto, a quick dish, unique, complete from a nutritional point of view, as we Italians like:
oil
2/3 cloves of garlic,
3 zucchinis
300g of frozen shrimp, well rinsed under cold water
a nice handful of parsley
vegetable broth
chili pepper
In a saucepan, I lightly sautéed the garlic with 3 tablespoons of oil, added the sliced zucchinis a bit of salt and covered them so they would cook with their own water of vegetation. Medium heat allowed for a light browning.
Shortly after, I added the rice, I put in a full glass (of wine), I used the long b grain, it's too good, it's even better than basmati and it also cooks quickly.
After a light creaming of the rice with the zucchinis, I started to add the broth and brought the rice to cook;
3/5 minutes before turning off I added the shrimp, the chili pepper, and to finish, a nice dusting of parsley.
They are those dishes, yes, a bit obvious, but that are always willingly eaten, at least for me, I hope it finds your approval,
