Hello Friends! I'm a month old here in Hive and this is my first time posting in Foodies Bee Hive Community. One of my hobbies is baking but for today's post I will share our family's all-time favorite mango ice cream, which according to our neighbor, "was the best mango ice cream I ever tasted". I know he was just kidding but I am sure this is really delicious.
There are many ice cream recipes from YouTube but after trying some of them and making the necessary adjustments according to my preference in terms of taste, creaminess, and fruit content, I came up with my own quantity and proportion of the ingredients. Compared to some recipes, this is quite expensive because I put in much mangoes and besides they are quite pricey here in our location.
The Ingredients:
4 pcs. ripe mangoes
1 pc. 250ml all-purpose cream
1 can condensed milk
150 gms. beryl's compound chocolate chopped into little chunks.w
The Procedure:
1.Chill the all-purpose cream and condensed milk in the fridge overnight.
2.Slice the 3 mangoes, scrape, and mash them. For the fourth one, just slice them into small cubes.
3.Weigh 150 gms of the compound chocolate and chop them into small chunks.
4.Pour the cream and the condensed milk into a bowl.
5.Using a hand mixer, beat them for more or less 10 minutes depending on the speed of your mixer until its volume is almost doubled.
6.Combine the mashed mango with the cream and condensed milk mixture for another 5-10 minutes. See the volume increased.
7.Combine the mango chunks and chocolate chunks in the bowl by folding them into the mixture using a rubber scraper or spatula in an up-and-down motion to mix them gently into the mixture.
8.Place in a covered container and freeze overnight.
The Outcome
The finished product was creamy and sweetness was just right. The mango bits/chunks enhanced the flavor of the ice cream and the chocolate chunks added another flavor and provided a crunchy texture while enjoying its creaminess. Though sugary, because of the condensed milk, but at least it does not contain artificial flavor and color.
Options
The two (2) main ingredients of this recipe are the all-purpose cream and the condensed milk. For sure you can make your own ice cream according to your desired flavor and taste. If you want a real fruit ice cream, you can use avocados, bananas, durian, jackfruit, etc. Just make sure they are not too watery/liquidy because ice crystals can form that makes your ice cream hard. I suggest that you only mash them instead of passing them through a blender; or if you need to, not too long, but just enough to break them down and continue mashing. You can also make other flavors like like chocolate, ube, cookies and cream or double dutch by adding marshmallows, nuts and chocolate chips if you don't want to chop chocolates. You also have an option to just use a flavoring only if you want to minimize the cost but of course the taste would be different.
