I love browsing the social media feed looking for ideas to transform my life, my home, my health...
And as the saying goes, "who seeks finds!" I found wonderful ideas, beautiful and perfect fridges with healthy foods in beautiful color-organized jars a treat for the eyes.
And after scrolling the feed for about 2 hours I go to my fridge, between jars of food with yesterday's leftovers I choose what I'm going to eat before going back to work. A perfect fridge is still a distant dream for me, a mother with 3 kids, a house and some works in progress to take care of, not to mention the time that procrastination consumes.
A perfectly organized life with a perfect eating routine is as far from my reality as having the body of pop star Madonna hahaha.
But last weekend I had a moment of clarification that maybe astrology explains, I was thinking that even if I don't have a fridge like the ones that appear in bloggers' posts I could be a little better.
So I started by cleaning all the fruits and vegetables I bought at the fair.
With all the vegetables clean and in front of me, I asked myself 2 things:
- What am I going to cook with everything I have?
- What can I leave ready to make mealtimes easier during the week?
To answer the first question, I researched recipes in my books (I love books) my favorite recipes and the easiest ones to make didn't take the ingredients I had so I adapted.
To answer the second question, I looked up all the ingredients they had in the fridge and thought of a way to use them by putting together ready-made things and forgotten ingredients that I haven't used in a long time.
And little by little I prepared food for the whole week and now I will have more time to play with my kids or deliver my work before the deadline, share content here at the hive (I love that too) or have a little time just for myself...
In addition to all these perks, I still have a dopamine pump being released by my brain for having completed a complex task!
Now for the results:
Jackfruit pie
I cooked jackfruit pulp (which I use to replace chicken in vegetarian or vegan recipes), with onion, garlic and olive oil. I made a pie dough using flour and butter and sesame, I opened the dough and in the mold and put the jackfruit filling, zucchini slices and after baking I finished with seeds.
Cassava dumplings
After cooking the cassava, drain the water and put it in the food processor with salt, coconut oil and massala. I made cookies and filled them with artisanal white cheese.
Hamburger with vegetables and seeds
My kids don't like vegetables and they love hamburgers so I used ground beef, seasoned it with salt, smoked paprika, soy sauce, miso, added crushed carrots, beets, celery and shaped it into a hamburger shape, after freezing, I have lunch or dinner ready in 5 minutes just grill.
Roasted vegetables
The leftover vegetables, I added salt, spices and olive oil and baked at the same time as the jackfruit pie. These vegetables can be used as an accompaniment to any meal and lasts up to 4 days in the fridge in closed pots.
