Hello foodies! This is my first time posting in this community. I want to share my recipe on how I prepare my Ghanaian stew.
Let me say this you can never go wrong with stew. As for me, stew is my best friend because as a student I don’t get the time to cook all the time because of over schedule classes. So whenever I come home from a busy day, feeling so tired and hungry, I just quickly cook rice, spaghetti, yam or anything to go with my stew. Because, these are easy and fast to cook. I usually prepare the stew and store it in my fridge
Ingredients
10 Fresh plum tomatoes
Fresh green and red pepper
Ginger
4 cloves of Garlic
3 large onions
1 cup of vegetable oil
2 Green pepper 2 carrots
Spring onions
140g Tomato paste
1 tin of Mackerel
1 cube of Maggi, 1/2 teaspoon full complete seasoning, 1/2 teaspoon full curry powder
Salt to taste
STEPS
First I wash all the vegetables warm water
Secondly, I cut ginger, onions, garlic and blended it
I then blend the fresh tomatoes and pepper together
The cooking process
I poured oil into a saucepan and added chopped onions and allowed to fry for about a minute
I then added the blended spices (garlic, ginger, green pepper and onions) and added to cook for about 2min
I added tomato paste and allowed to cook about 5min
Then, added the blended tomatoes and pepper and allowed to cook for five min
I added maggi and other seasoning and allowed to cook for another 5min
I chopped some carrots, onions, green pepper and spring onions and added to the stew and added chopped sausage as my meat
This was how I enjoyed the stew with spaghetti
