I discovered this delicious cauliflower recipe a couple of months ago and I can't stop making it. It is super easy and is sure to please even the pickiest of eaters. I've been making it, at least, once a week. Enjoy.
What You'll Need
9" x 13" Baking Dish
Cauliflower - I'll buy a head or two of cauliflower and cut them up into florets. Whatever I don't use I'll store in the refrigerator for a future batch.
Parmesan Cheese - One cup. In shredded form. I like to mix in a little mozzarella cheese if I have it.
Extra Virgin Olive Oil - 3 tablespoons.
Italian Seasoning - 3 tablespoons.
Garlic Powder - 1 tablespoon. I will use garlic powder but I will also dice up 3-4 cloves of garlic. Yeah, I like garlic.
Salt and Pepper - To taste.
Instructions
1) Preheat oven to 350 degrees.
2) Spread the olive oil over the bottom of the baking dish, coating entirely.
3) Add the cheese, Italian seasoning, garlic, salt, and pepper to the dish.
4) Mix well and spread evenly over the baking dish.
5) Place the cauliflower, flat side down, over the cheese mixture. I like to sprinkle a little extra cheese and Italian seasoning over the cauliflower.
6) Bake at 350 degrees for 35-40 minutes depending on how well done you like your veggies.
Tips
1) Don't overcrowd the dish. I made this mistake once and the cauliflower came out undercooked.
2) If the cauliflower has a flat side, place that side into the cheese mixture.
